I love the smell of giant redwood foliage and wood. At first I found it unusual, but now whenever I spot an accessible tree I go over to smell its foliage.
Any thing to do with a eye injury scares me bad cause I have retnoplasphomia, (its spelt wrong I don’t have a clue how to spell it) which is basically inherited eye cancer(its gone now) and I cant see out of my right eye very well

Perhaps as a sorbet, like a sasparilla soda? File for Gumbo is very pungent.. but best for savory dishes... but a rootbeer sorbet or a rootbeer cream might be a nice flavor to aspire to!!! Great idea!

Indigenous Food Lab recently released a video where cedar leaves/branches were used as a primary spice in a savory meal. Seemed like something you or other people here would be interested if you hadnt found them yet.
You should make maple ice cream with roasted, candied maple tree seeds). Depending on the variety, the seeds can be either quite maple-forward or very bitter. In either case, I would definitely recommend soaking them a couple of times and then roasting them with a little salt before candying. The young, green seeds have the best flavor.
So basically, the cedar flavor is far more aromatic than a traditional taste, and could be added as more of a ‘spice’ to the ice cream than an actual flavor. It would be interesting to see it combined with the oak ice cream to see if the bolder more upfront oak would come through first with the cedar aromatic coming in after, or if they would mix into something new. You could also put the candied hickory nuts as the mix in, that way you could have a hybrid of all three wood ice creams. You could call the flavor “the woody treenity”. The best parts of all three flavors in one. Maybe it would work, or maybe the flavors wouldn’t play nice. Might be good though.
Fun fact, a large majority of what we humans categorize as taste is actually smell. It's called retronasal olfaction, where the food's scent molecules flow upward from the back of the mouth as you breathe. So him saying that he couldn't really taste anything besides the cream until he started talking suggests that cedar doesnt actually have anything that the human tongue can taste, only its distinct aroma.
I’ve been drinking walnut leaf tea from my aunt’s tree, can’t help thinking what would be possible in an ice cream... The tea tasted a bit like English breakfast tea by the way but a bit more of an herbal flavour to it. Really tasty!

Do pistachio icecream!!!! Pistachios are my favorite nut/treat and i haven’t tried pistachio icecream yet, but taking it to the extreme by making a whole pistachio wood cream with pistachios in it would be an amazing concept

Hey, I don’t normally leave comments, much less comments telling people what to do, but I love the idea of the chocolate branches, especially for epic plating purposes, so I thought I’d suggest food safe molding putty. From what I’ve seen it’s better for these kinds of small mold making things. You wouldn’t have to worry about things floating or the blobs in the mold from hot glue and I think it’s cheaper. If you do it right you could have a mold of the whole 3D branch! I don’t know what is the best stuff to use though, but I’ve seen other TH-camrs, like Sideserf cake studios, use this kind of thing to make really cool stuff. Anyway, I love your channel! Keep being creative and awesome!
Have you considered apple or pear icecream? Applewood is a smoking wood, so you could reuse the smoker, and being a fruitwood, it's apparently good for carving and turning. Or an apple cake topped with apple smoked icing or something weird.
I love this series and your videos. I really like the taste of "Zirbenkiefer" and "Latschenkiefer" both are pines, the botanic names are pinus cembra and pinus mugo. You find them tipically on high mountains in the alps. They taste really good. In my country they even make risotto with Pinus Mugo or other tasty things. Maybe you can someday get your hands on some wood, pine cones or essential oils.

I make it with pecans because that's the amount of work that feels reasonable to me, but I'm sure it could be delicious with acorns as well.

Good eye protection is underrated. I have some 3M saftey glasses with a foam wrap to help keep dust from going around. I have really nice goggles for skiing, mountain biking/motorcycle, and snorkling. Great boots with protective toes (I like composite) and a anti slip sole are also underrated.
Ever consider sumac? The wood has a mild and pleasant scent when carving, but doesn't smell like typical wood. Might make a "lemonade" flavor ice cream 😊
You should try wild cherry! I've been carving spoons with the wood and it's not only beautiful, but it smells so good. It has a really sweet fruity smell that is supposed to be great for smoking. The fruit is pretty astringent, but makes a great syrup. And i bet the blossoms would even taste good. Even if you don't do it I probably will haha

Good eye protection is underrated. I have some 3M saftey glasses with a foam wrap to help keep dust from going around. I have really nice goggles for skiing, mountain biking/motorcycle, and snorkling. Great boots with protective toes (I like composite) and a anti slip sole are also underrated.
Ever consider sumac? The wood has a mild and pleasant scent when carving, but doesn't smell like typical wood. Might make a "lemonade" flavor ice cream 😊
I always think your cedar ice cream tastes great and the wooden spoons and bowls are great. It makes me want to have one too.
SAUNA ICE CREAM YEAAAH! We Finns would gobble that up because a) the taste of sauna, b) we're one of the biggest consumers of ice cream

You should try wild cherry! I've been carving spoons with the wood and it's not only beautiful, but it smells so good. It has a really sweet fruity smell that is supposed to be great for smoking. The fruit is pretty astringent, but makes a great syrup. And i bet the blossoms would even taste good. Even if you don't do it I probably will haha
