    Thank you Lisa for answering all the questions about this important topic. You really provided us with the deepest and most comprehensive feedback on freezing milk. I think if we just remember about 2 simple rules we should avoid most of the mess: 1) do not use glass as a container & 2) always keep some room for expansion of milk.     Thanks. Timely video. I actually have a gallon of milk in the freezer for the first time in my life. Will not be used for cheese making though, it is only 1% milk. 🤠

      Hi Larry! Sure. Food preservation information is pretty important right now. I drink 1% too, and use whole milk for cheesemaking with the exception of Parmesan.
      The first time I used thawed milk for cheesemaking I was a little nervous. It's good to know it can be done with no adverse effects to the cheese. 👩‍🍳

      Thanks, and yes! You can substitute cultured buttermilk for mesophiliic culture. Just use 1/4 cup cultured buttermilk per gallon of milk.

    I usually get a gallon, then transfer it into 4 - 1 quart container, then freeze them. Thawing out 1 quart at a time as needed.

    Tell me, is it safer / more healthy to use half and half or low-fat milk in an iced latte? I prefer half and half over low-fat milk. Whats the difference in flavor because I distinctively taste it.

      I love mine with cream too. Half and half cream has between 10 and 18% butter fat, while low fat milk has about 1%. That's why your iced latte tastes better with half and half. Which is healthier? I can't really answer that- I'm not a doctor or nutritionist, but I do play a cheesemaker on TH-cam 😉

      Sure! Just leave some room at the top of the container so it can expand. Shake it well before it's consumed. It can last up to 6 months in the freezer, so that means you can have Christmas in June:)🌲🥛 Enjoy!

    Do you get the majority of your milk from the store, or do you have cows? I know that for this video you were showing store bought milk, but I'm curious. Cheese uses a lot of milk.

    Hi!
    I have had a regrettable mishap when making the recipe of; Hispanic Cheese. According to the page where I buy the materials, it indicates "salt" in the ingredients. But it does not specify if it is for the curd or for the mixture. So, use my reason, and I said; if the recipe is different, and it says salt in the ingredients. Well, I add a little salt to the mixture. And what happened? not curd 😔 lost my ingredients. The mixture is cracked automatically, I add it, the calcium chloride and the rennet.
    I think that the explanation should be more detailed. Because not even in the instructions does it mention calcium chloride.
    Look for your video on youtube of the cheese recipe and it wasn't there. You are really fantastic teaching.

      Yes. You can freeze raw milk to make all of those things later. Butter can be frozen, but cheese suffers from texture issues, so I do not recommend it. Hope that helps. Happy cheesemaking! Lisa

      What did you think about goat raw milk for cheesed, cream, utter, ice-cream...? Can we make all the same things than with cow milk?
      I love cow cheese, and all the goats cheeses I have tried here have a to strong goatee flavour for me (not for every day or kids...).

      Assuming it hasnt expired like, 5 years ago or something, it should be fine, as long as it's been stored in the fridge. My Mom always says, "Expiration dates are suggestions." :) Hope that helps!

    I found that, when I re-used plastic containers, they smelled bad after washing and drying them. I couldn't use boiling water to get rid of the smell, because that would deform the containers. I tried using glass bottles, which were easy to clean, but they would crack in the freezer as the milk expanded. What is the best way to store milk in a freezer ?

      Well, that's a tough one, because your choices are glass, plastic, or cardboard. Card board is out because it can absorb the odors of the other food in the freezer. Breakage is a problem for glass usage. Plastic is the best option, in my mind, because it reduces the risks I just mentioned. I don't reuse the plastic jugs. An option would be to freeze it in ice cube trays, then store it in ziploc bags. This could work especially for smaller amounts of milk. Hope that helps!

      @@Cheese52 The ice cube trays would be a good idea, but I usually buy a 4 pint container, and would need something to freeze at least half that (2 + pints), while I keep the other half for immediate use, in the refrigerator. Maybe I will find stainless steel bottles or something similar. Thanks !

    You can freeze everything even for 10 years,forever, Nothing happened wrong when is in cold ice.

      Well, yes and no. Can something be frozen for ten years? Yes. Will the quality of the product be the same as when it was first frozen? No.

    It may taste the same, but in my experience, thawed milk has gross lumps in it.

    Ha Ha milk mustache lol. I was hoping you were going to say how long you had to drink the milk after thawing. Cause if it was to expire in January and you thawed in march it would be already two months past the use-by date. You did say 7 days though but milk doesn't last long around here I could drink a gallon of chocolate milk and a gallon of white milk every two to three days myself...LOL

      To your question- freezing puts a "freeze" on the expiration date, and allows us to extend it's life for a while. If the milk was only a day or so away from the expiration date when it was frozen, after it is defrosted it basically goes back to the state it was in before it was frozen. So in this case, there's only a very short time before it is no longer viable.
      Here's an important tip- once the milk develops a sour smell it's time to toss it.
