- This is how Ice cream is made in India using a traditional method. This tiny place called Kishan Kulfi falooda is one of the very few places that prepares the kulfi ice cream in a traditional manner without using any machine. These kulfi ice creams are using in making a delicious plate of falooda.

@@gufron4011 Ice cream is basically FROZEN custard, so all you need to do have for a an ice machine is the custard and a way of freezing the custard while also churning it. The way the ice cream in this video is made is they put the unfrozen custard into the plastic containers, then into that giant bowl thing (I don’t know what it’s called), where they then add ice and begin to rock the bowl to churn the cream. Kulfi is similar to ice cream in appearance and taste but denser and creamier. It comes in various flavours. The more traditional ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio. There are newer variations such as apple, orange, strawberry, peanut, and avocado. Unlike ice cream, kulfi is not whipped, resulting in a solid, dense frozen dessert similar to traditional custard-based ice cream. Thus, it is sometimes considered a distinct category of frozen dairy-based dessert.Due to its density, kulfi takes a longer time to melt than Western ice cream.
History
Kulfi or Qulfi is a Hindi word derived from the Persian Qufli (قفلی) meaning "covered cup". The dessert likely originated in the Mughal Empire in the 16th century. The mixture of dense evaporated milk was already popular in the sweet dishes in the Indian subcontinent. During the Mughal period, this mixture was flavoured with pistachios and saffron, packed into metal cones and immersed in slurry ice, resulting in the invention of Kulfi. Ain-i-Akbari, a detailed record of the Mughal emperor Akbar's administration, mentions use of saltpeter for refrigeration as well as transportation of Himalayan ice to warmer areas.
Preparation
Kulfi is traditionally prepared by evaporating sweetened and flavoured milk via slow cooking, with almost continuous stirring to keep milk from sticking to the bottom of the vessel where it might burn, until its volume is reduced by a half, thus thickening it, increasing its fat, protein, and lactose density. It has a distinctive taste due to caramelization of lactose and sugar during the lengthy cooking process. The semi-condensed mix is then frozen in tightly sealed moulds (often kulhars with their mouths sealed) that are then submerged in ice mixed with salt to speed up the freezing process. The ice/salt mix, along with its submerged kulfi moulds, is placed in a matka or an earthen pot that provides insulation from the external heat and slows down the melting of ice. Kulfi prepared in this manner is hence called Matka Kulfi. Kulfi, thus prepared by fast freezing, also renders a unique smooth mouthfeel that is devoid of ice crystals.

For those wondering on the ice on the ground, you are worried about the wrong things. The ground is merely covered in dust and wouldn't do to much harm, especially since the ice cream cones are in individual plastic containers. The real problem is the water tank he dips the cones in with his bare hands. That water becomes a swimming pool for all kind of germs and he constantly dips his hands in and then touches the ice cream with it. That's how you get explosive diarrhea, not because of some ground dust.

So uhhh… did he use the same ice that was on the sandy floor for the garnishes? The yellow garnish and white coconut garnish? 😅 Anyway, years back I went to India Mumbai for a 14 days vacation with the family. We had a guide with us and he strongly told us to not eat food from the street stalls. Me being me, I was so curious and wanted to try the thing where they put some potatoes in it and some sour herb water (can’t remember the name). I wanted to try it, so while my family and the rest of the group went in some tourist shop, I went out for awhile and wanted to buy and try it. I tried one, it was good, and tried another two more. That night, I vomitted, had diarhhea and a high fever. The whole 14 days trip I was sick. My family asked me what I ate, and I told them the food from the street. True enough the guide called a doctor up to check on me and it is confirmed I had food poisoning. Doctor even advices against eating from street food vendors as they are unclean. The diarrhea and vomitting part sucks since there were lack of public toilets… the worst was when the toilets have no water to clean myself up. So I mostly stayed in the hotel room alone, since I am old enough to do so, and if I was bored I’ll walk around the hotel or the shopping mall beside the hotel but I don’t stay out too long because the diarrhea sometimes come without warning 🤣 It was awful… all I can eat was some bread bought in some convinience store, and some porridge from a restaurant that the guide recommended.

The ice placed in the pot, which was from the ground, was just freezing the kulfi containers (small cones). These ice do not touches the kulfi mixture.
And Savaiya/sev ke liye alag ice use karte he, jo khaa sakte he and comparatively costly hoti he; Kyu ki vo mineral water se banti he.
Jo ice zami pe rakhi he vo mineral water se nahi bani hoti. Vo ise sirf chizo ko thanda karne k liye kaam aati he.😇

Even now, many cooks and professional chefs do not wear gloves. The only difference is they have impeccable hygiene, very very clean hands wash with hot soapy water and scrubbed and clean utensils which Uncle did not.

@@asdfghjkl-so9vl The kulfi tastes Milky and pistachios while Simai taste like boiled noodle but complements awesomely with Kulfi. I just had it yesterday, it costs around 70 rupees where i live

Like the previous guy said it can past disease and tragic things can happen to people who aren’t educated about this and eat it, Like children perhaps who have weaker immune system. Can’t make excuses for the servers not being hygienic. They need to wash their hands and wear gloves.

Would someone from India be kind to explain what the different things are? It almost look like grated mango and then the white stuff also something grated? Are the cones normal ice cream with different flavour? I see him scoop up another ice cream as well from the bucket and 2 different types of sauce? The pink sauce sure sticks out and I wonder what it taste like.

Pretty sure its standard cream ice cream flavored with local stuff. (Can range from local nuts, honeys or saps, or spices like macha and chili). What your seeing is like shredded mango and another shredded type of fruit, possibly coconut or a melon of sorts, a marshmallow creme topping kind of like whip cream and marshmallow mixed together and then basic cherry syrup.
The grated stuff are noodles. The red one is sort of jam or jelly. The cone have typical indian flavour of nuts. But this is not how our traditional ice cream is everywhere . Its usually only the cone with richness of spice and nuts .

@@messiahshow ohh no no they are not marinated but the sweetness of ice-cream and jelly adds to it. Yaa it tastes good more when the ice-cream is melted. We call it falooda.
