How to Can Peaches

    INGREDIENTS
    For the syrup:
    - 2 1/2 cups water
    - 1/2 cup honey
    - 1 tbsp lemon juice
    For the jars:
    - 6-10 lb peaches (small to medium in size), peeled, pitted, and placed in water to prevent browning
    INSTRUCTIONS
    - Place water, honey, lemon juice in a kettle on the stove and bring to a simmer. While the syrup is heating, place peach halves in sterilized quart jars in a stacked tile pattern to help them fit better. Do not push them in!
    - Once the jars are filled, pour boiling syrup over each. Divide evenly among jars, leaving ½ inch of headspace. If the syrup does not fully fill each jar, top each with boiling water, leaving ½ inch headspace. Fit with lids and rings, following manufacturer’s instructions, and place in a boiling water bath for 20 minutes.
    - Once completed, place jars on a cooling rack or towel and leave with rings on for 24 hours to ensure a good seal. If a jar does not seal, simply place it in the refrigerator and enjoy eating!

    I'm canning my own Peaches this year. My tree is about 4 years old. Last year it had small peaches nothing good. This year it was loaded with big beautiful peaches. I got to pick them before the Squirrels got too many. 😆

    My Mom taught me to put 1 peach pit in the bottom of the jar plus she added a teaspoon or 2 of real almond flavoring to the syrup. So good!

    I love this syrup. The sugar recipe is why to sweet. Could I use less honey? Hope Kipp is doing well! 🌹

    What I do is drop the peach in boiling water for 30-60 seconds and then drop it in ice water. More ice than water. The peel literally slips off no issue.

      It’s called blanching. Works very well.
      Peels can be used for tea

    Peaches was my first canning try. The film was clear and I didn't see it on the rim. But it was there. Only two of my bottles sealed out of 23... I wipe ever rim with hot water on a paper towel; every bottle has sealed since 1984😁

    Nothing like that smell. My grandmother canned peaches every year and then in January, there they were.

    Do you need a special canner? Or can u use a regular pot? Can the jars sit on the bottom of the pan or must they be raised up?

      I hope your questions were answered. A towel in the bottom of the pot will do in a pinch. At Walmart you can buy an inexpensive expandable silicone trivet for the water canning pot. Any deep sturdy pot that will allow a minimum of 1” water over the top of the jar for the entire recommended processing time( 2” is better) and a good fitting lid.

    You never gave measurements for honey or time for WB peaches. But they looked good.

      20 minutes put check the USDA website to make sure you have the right time.for your area
