Living in a rural area of the US, I have not been able to find mirin. Sake, yes, but no mirin. Any suggestion for a mirin substitute?

If you don’t have mirin, you can substitute it with sake and sugar.
For each tablespoon of mirin needed, mix:
1 tablespoon of sake
1 teaspoon of sugar
This combination will provide a similar sweetness and flavor profile to mirin.
