    I like how u prepare tandoori chicken, it feels good to see my favorite recipe. However, For the marination, I wud like to suggest,along with your prepared marination, a powder mixture of corriander seeds,cumin,black pepper and Kasoori Methi(dried fenugreek leaves)- this will take the tandoori to the next level. For the spices to reach deeper into the flesh,the chickens are usually slightly cut on the outside-not deep cuts. And finally, squeeze some lemon and brush a little butter just before serving- the magic of tandoori will be revealed!

    I am an indian and i must say you have done an incredible job. However don't be let down by it not turning out perfect like you may have seen in restaurants because they have an actual Tandoor can go upto 700 centigrade approx 1300 F . This was really enjoyable

    I have an idea ! Try resting an unglazed clay saucer against the inside of the kamodo and bake the naan in there. You get the breathability from the clay, and the lip of the saucer protects the naan edge from getting burnt.

    Well... I ate that stuff a lot from Amritsa to Calcutta to Raipur, Bangalore, Chennai, Vadodara, Bhilai, Bokaro, Durgapur, Rourkela, Salem, Visvesvaraya, Vijayanagar, Mumbai, Delhi, Hyderabad, Pune and a MANY more locations. That is a true masterpiece, Roel... I doubt that one can get closer to a real tandoori than you did. In fact, there is a little difference, but that does not count in reality because in India it is different as well depending on the location where you are. That is true a great, great job, Roel. Thumbs up!

    Hey Roel, the marinade looks great and I‘m glad you didn‘t add a spice mixture that features the typical purple artificial coloring used in many tandoori spice mixtures. Not sure I would make my own naan bread, but that‘s just lazy me. 😉

    I bought a Kamado just for making Tandoori chicken. I find the best way is to crank up the heat full monty and take the top vent completely off and i can get 2 skewers of chicken through the top vent just like a Tandoor and lean the top cap against the skewers while its cooking.
    Naan is so hard still havnt perfected it yet. good but not restaurant quality yet.

    I am from India and you have done it perfectly, I was thinking you will never put yogurt as I watch all of your videos, which is a key ingredient. You need to try it with lil bit of Garam masala and Kashmiri red chilli powder, it will give a nice colour just like your rubs , Well done

    good vid, showing your mistakes with the naan bread really show's what cooking is about, try, try and try again till you get it rite. fair play. I use flat bread when I BBQ, same quantity flour and yoghurt with a bit of baking powder and a good pinch of salt then whack on the grill, oh and plenty of melted butter YUM!!

      Just a tip, "naan bread" is redundant as "naan" literally translates to "bread". So you're say "bread bread"

    I have a question though, what is the make and model for the huge Kamado Joe that you are using here. I've had a look on their website and I can only see the Big version which is about 24inches but isn't nearly as massive as yours. Thanks in advance.

    FYI, I use about 1tbsp of mustard oil and then cut it with 2tbsp of olive oil. Flavor still comes through great and reduces any health effects from the mustard oil. Also much easier to mix all the spices, yogurt, and oil first before adding the chicken.

    Mustard oil is cold pressed oil unlike sunflower oil which are mostly refined oil is,they are added with chemical to extract oil.so I think mustard oil is healthier

      nisha p that is true. No cholesterol build up. But there are chimicals wich are highly toxic in it by nature. If you are pregnant never eat mustard oil.

    U need a small roti pillow for naan in a tandoor. Add an egg in ur dough for softness n perfect colour. Missing chat masala. Fenugreek leaves powder n butter in ur tandoori chicken

    Good job on the Naan in the end - i have failed making naan soo many times lol. In the end i have decided that using a pizzastone just like you mention is ok in my world .)

    Roel, on a tandoor, the bread is on the concave portion on the top. An Egg or Kamado is not going to provide a suitable surface.
    Second, naan in Hindi is bread, so when you say "naan bread" you are saying "bread bread". The same is true for pita.
    Oh, you youngsters, don't you read Latin and Greek anymore? :-)I spent 6 weeks in Turkmenistan learning this stuff.

    With regards to the small red pepper you did not know; I'm pretty sure that's an Adjuma pepper, often confused with the Madame Jeannette. They're both equally and incredibly hot, so watch out!

    Most of ur meats looks uncooked !
    I've watched more then 10-15 vds all the meats are looking like they were uncooked from inside!
    But i thought maybe European people only cooks the meats for killing bacteria!😂!!
    Bt in south asia we cook until the meat gets timder & juicy & really tasty!
    & U can spell the from from like 300-500 metres !
    I would suggest u to grill the tandoori chicken form more time but in a lil less heat! If u don't want the chicks to be burnt!

      Red meat which looks "pink" inside isn't raw. The doneness depends on amount of Pink in the centre. Also the red liquid isn't blood, it's myoglobin.
