I have only done the water bath for salsa, tomato sauce, preserves and cactus (Nopales). We started a garden and had a lot of green beans and other veggies and found out I needed a pressure canner so we just ordered the All American canner and it will arrive in a couple of days. I can’t wait to try canning meat and beans now. I am nervous so I have been watching a lot of videos and you inspire me Patara I am ready to start canning the safe way. I came across your video a few months ago alerting people about preparing for emergency and I really appreciate what you do. May God bless you and your family.
Found a meat sale. Was cutting up pork while watching this. Just got 9 pints in canner and cutting chicken for another day. Going to be up till 2 or 3 am. I stopped for potatoes and sour cream and that was on sale also. Ended up with over $60 on sale items. What a lucky day!!

I love seeing canned food in those beautiful Ball jars. I store sugar, coffee, flour ( stuff like that) in jars because it looks so beautiful. I have never canned food but Id like to try. Pressure canning is an important skill to have.

Canned kidney beans last week, and salsa and tomato sauce today. You’ve inspired and motivated me! And my hubby made maple syrup! 30 gallons of sap boiled down to 8 pints.
After reviewing several different videos about canning beans, this is the one I keep coming back to. I can have a year's worth of beans ready on the shelf in two days time. Going to run with it, following safety guidelines of course. Thank you Patara!
thanks for the tips. I just started canning last week and wanted to do beans. Everyone I had watched said to not soak the beans, but I think now I am going to soak mine. I have digestive issues and need my beans to be softer than most people do, so I will soak my beans first :)
I find beans are so much better if you soak them first. Get the ball book on preserving foods. I soak them. Cook for approximately two minutes then soak. Rinse and repeat. Then jar up and can. Rinsing after soaking removes games that cause digestive issues.
Worth every penny. You don't have to have a ALL AMERICAN, a inexpensive Presto gets the job done. Save up for one! Find them at Walmart for about $80....great investment for your future!
If you haven’t gotten canning jars or extra lids NOW is the time. Here in Knoxville, they went up a 1.39/dozen of quart jars at Walmart in less than a week. Right now quarts are 11.97 while other places they are 14.99. I paid 10.58 3 days ago. If you wait they will either be out or even higher.

I've done my beans this same way. I'm wondering why you did not cook the beans prior to canning. The NCHFP calls for 30 minutes of boiling regardless of soak method. I just upgraded from a 16 qt to a 23 qt Presto canner! We've never had a rodent problem before (14 yrs in this house) but this year we had ONE mouse that did so much damage in my garage pantry. We think it came in on some pallet deliveries for my husband's job. I've revamped all my storage...it was a blessing in disquise.
Was told to put rings back on but just barely. Basically set them on jars to keep mice from opening them and that way when I stack the others are sitting on top loose lids an no my jars. Also no longer have to figure out storage for all the bands

I like to use my vac sealer to soak my beans. Speeds up the process quite a bit. I only add a quart of dried beans to a half gallon jar and top it off with the water because they swell up a lot. Then I give it a shake now and then, or just set the jar on it's side in a catch pan in case the lid leaks for some reason. This way I avoid the beans getting all jammed up and difficult to remove or even breaking the jar.
Thanks for the explanation. Now I need a pressure canner. But before that I need to get my tiller working. May need to replace the engine, which could be the same cost as a canner, if I go with a small diesel instead of a gasoline. Trying to think in the future on that. If gasoline is not readily available, I might be able to use vegetable oil or waste oil instead of diesel to run my tiller. Again, thanks for the video and explanation.

Do you vacuum seal the jars? Do you use oxygen absorbers? Thanks!
If you're dry canning in the oven, there's no need to freeze your staples. I freeze my flour and rice for three days, allow to return to room temperature, then vacuum seal in bags or quart jars. That's what I love about all this prep work, everyone has their favorite go to method. Enjoy!
I did some the other night and left 1" headspace and they soaked up all the water I put in and expanded so much they were smooshed to the glass! It took me hours to get them out of the jars to compost. I was so upset so I feel ya! I've seen a few more videos where they only put 1/2 cup of beans in each jar. I think I'll try that next time.
Doing beans is a learning experience for sure. Took me about 3 tries before I got it right. I am like Patara and presoak my beans 24 hours. I like this method because for me personally it is easier to gauge how much head space to leave at the top of the jar. With a larger bean like Northern Beans I will fill the jar with presoaked beans up to the shoulder of the jar or a little less and add water, making sure to debubble after filling with water. With a smaller bean like Black Beans, you can get by with a little less space at the top. But not much less. The reason for leaving a little more than one inch space at the top is to give you enough water to finish the beans without them being too compact when done. I have done the rebel no soak method and it was easier to gauge how full to fill the jars with presoaked beans because they will expand a lot less. Just soak up the water in the pressure cooker. If you ever decide to try making baked beans that is a bit different in that you will need to both presoak and precook the beans for a short period of time. Btw, in the beginning I have blown out the bottom of one jar and blew the top off in the canner on another. Don't get discouraged, once you get the hang of it you will love canning! Your food tastes so much cleaner and fresher❤❤

Have you canned Black Eyed Peas? I just did some soaked overnight processed 75 min and they came out mushy. I know they cook faster than most beans do you have a suggestion for them to be more firm?

Anyone notice that the boxes of canning LIDS state they ONLY stay sealed for UP to 18 months???👀🤔 I need my canned goods to stay sealed WAY longer than 18 months!!! 😱🙄
I think the nutritional content drops after about a year anyway. Most people rotate their home canned foods in that time and then can more for the next year. I don't it is meant for really long term storage.
@@aroundthefarmcrafts3192 Yup, I recently used up 2019 pears that were perfect and in fact better tasting than the 2021 pears made last year. I think it is because the pears has lots of time to marinate.
All of the main recipes I find say to cook them 30 minutes first in addition to soaking them, is not cooking them 30 minutes ok? In addition I actually soak mine and then sprout them to maximize nutrients, just so you have all the info.

Question please....after canned beans cool do contents solidify? Mine look dry the next day. I followed all directions. My first canning attempt so I'm unsure. All jars sealed. No liquid seemed to have leaked. Help please! Thank you
100% because my stove is RATED to allow that. Check with your manufacturer. I also do not double stack in my canner either-just using extra caution. But, indeed... I am. Thanks for watching!
Okay I am a beginner, I don't want to buy something if I don't have to. I have all kinds of ball jars but not the kids, I know paraffin wax, everyone is against it, but what about using my silicone bags vacuumed. Or can I use just aluminum with the wax that fits on top? Idk.

Saw something on another video. I put a ladle of water in my jars first and add some beans. Less air bubbles

Have you tried dehydrating cooked beans. Already cooked just add water to rehydrate.

I have tried soaking most kinds of beans and they always turn mushy so i use the dry bean method and they come out great. It isn't usda approved.
I want to buy some more canning jars and lids for my daughter. She is going to teach me how to can. I'll buy fruits and veggies and we will talk, teach, spend good time together. But what size jars and lids should I buy? Quarts? Wide mouth? It's all Greek to me. Can somebody send me a link? Thank you for all the lessons learned. My Waterford crystal and china has been put in boxes so I can put CANNED GOODS in my china cabinet!!' How times have changed!
Buy both. Brand new jars come with lids and bands. Some foods can be done in a water bath canner. Others need a pressure canner.

Contact the manufacturer of your stove. They will tell you if it can handle it.
Not recommended for glass tops due to weight of loaded canner.

Anyone notice that the boxes of canning LIDS state they ONLY stay sealed for UP to 18 months???👀🤔 I need my canned goods to stay sealed WAY longer than 18 months!!! 😱🙄
Lids will hold for longer than 18 months even when the box says 18 months.
I’m with you Kristy. Need a longer storage time. I think as long as it is sealed it’s okay.
I think the nutritional content drops after about a year anyway. Most people rotate their home canned foods in that time and then can more for the next year. I don't it is meant for really long term storage.
That may be all they will guarantee them for but I just used some tomatoes and tomato sauce from 2017/18 still just fine.
@@aroundthefarmcrafts3192 Yup, I recently used up 2019 pears that were perfect and in fact better tasting than the 2021 pears made last year. I think it is because the pears has lots of time to marinate.

All of the main recipes I find say to cook them 30 minutes first in addition to soaking them, is not cooking them 30 minutes ok? In addition I actually soak mine and then sprout them to maximize nutrients, just so you have all the info.
I heard you can't use a pressure canner on an electric stove...I have a pressure canner I have never used...kinda scared to use it..I hear so many different stories on the don't do this or do this it just makes me nervous...anyway I definitely do appreciate you taking the time to show and explain situations...thank you
I have an electric stove that I purchased in 2022.... and I pressure can on it.
It is recommended not to use a pressure canner on a glass top electric stove. Weight may cause glass top to break.

Question please....after canned beans cool do contents solidify? Mine look dry the next day. I followed all directions. My first canning attempt so I'm unsure. All jars sealed. No liquid seemed to have leaked. Help please! Thank you

I say just put beans outa the bag into the jars,,, it will keep them longer than the plastic bags.

100% because my stove is RATED to allow that. Check with your manufacturer. I also do not double stack in my canner either-just using extra caution. But, indeed... I am. Thanks for watching!

Okay I am a beginner, I don't want to buy something if I don't have to. I have all kinds of ball jars but not the kids, I know paraffin wax, everyone is against it, but what about using my silicone bags vacuumed. Or can I use just aluminum with the wax that fits on top? Idk.
If you have Ball jars, you can buy the lids and rings.
