@@MountainMenOutdoors I would recomend marinating beaver meat overnight or even 48 hours (the longer the better), also find out the activity atitude on a seasonal basis ... in the period after Winter (March, April .... )they eat alot of fresh new plants that improves the meat quality also look for larger sized beavers
Varys a lot with age, I have had young beaver tastes like goose, never ate a lot of goose, but it is different from a 60 lber that I thought tasted like pork. Never heard beef before. Maybe the cut and metods of cooking.
