The best thing is the awesome way he and his kids go through life as equals. Yeah he is the dad but he treats them as friends. Very refreshing.

I make a similar meatball. Basically the only difference is I use half beef, half pork and add diced water chestnuts for some texture/ crunch.... awesome!

Since it wasn't called out in the video: When you're slicing skirt or flank steak, you want to do it both across the grain, and at an angle like Sam did. They're both relatively tough cuts, so cutting across the grain and at that angle shortens the muscle fibers in each slice, which makes them more tender.
Back in our more adventurous 70's my young wife and I lived near the airport, we'd do family planning on our otherwise private deck. Our neighbors would complain about the small airplanes circling.
Red cabbage fried in bacon grease, fried bacon pieces set aside, add brown sugar and cook until well blended, then add vinegar cook until slightly wilted "dehydrated". Add bacon bits.. Yum yum. Sweet and Sour Cabbage.. Served along with meat appetizers..
I must thank you Sam for always pointing out about not crushing your Ground Beef together. Everything I have cooked is so tender compared to how it was in the past. I really enjoy your shows and try many of your recipes.

Made the crostini but added some pickled onions on top instead of the greens. It was fantastic a hit for New Years Eve party.
