The Wok supposedly came about because the Chinese had very little fuel to cook on and the Wok gave a large heated surface quickly, giving rise to the stir fry. What wonderful dishes they managed to create beef being one of my favourites. I am sure this one will not disappoint :).
I've never quite had this dish, but it looks very good. Tomatoes and eggs are also surprisingly good. Side Note: Some of the best advice I ever got from a Chinese cook for making chop suey was, "If you want to make it really authentic then don't follow the recipe I just showed you, use what you got." This one looks really good, thanks Rik.
I just saw this recipe yesterday by Chef Pailin of Hot Thai Kitchen (her mother-in-law's recipe). One thing that she does as I do is to freeze the beef somewhat, making it easier to cut. She also did not take the skins off the tomatoes. I am definitely will try this.
Looks yummy! Have to try this one. I forgot to tell you I made the beef and broccoli.. awesome. And was blown away by the results of velveting the meat. Here it's called top round, normally tough steak unless you braise and slow cook it. So simple... and so VERY tender! Amazing!! Now hubby is keeping an eye out for top round in the stores because it is so much more affordable. Can't believe some of those "chefs" insist you need Rib Eye or better steak to make it! Thank you, Chef!!! (sorry... but you are more than "just Rik" to me... you are Chef! :) One more stupid question... is there really a difference in using white pepper over black pepper? Shirley in NH

Fantastic as usual Rik. I don't own a wok as my induction hob isn't really suited but am looking to get a single portable gas hob similar to yours and then trying some wok work??? Doesn't sound right 🤣 . Honestly though beef and tomatoes are high on my taste list and your sauce looked absolutely fantastic, come on!!
Fabulous stir fry variation! Like this variation as it does not use bell peppers as they upset my tummy as delicious as they are! The tomatoes give the dish a lovely color! Thank you, Rik!!!
Parsnips are a good substitute for the carrots. They release less water, and have a slightly medicinal taste that goes well with the beef and tomatoes.
I had to laugh when you said you were going to knock up the sauce,I haven’t heard that expression since I worked in a bakery in Birmingham from 1960-65,it’s not an expression used when talking about food in the US. I have never ordered beef with tomato,always beef,and broccoli,or pepper steak,but it did look good,and very easy.I always peel my tomatoes when cooking them,except the tiny ones,cherry,or pear.
Just asking for others and me Rik, would a can of drained plumb tomatoes work as a substitute? Right now globe toms are $1.98 lb so 2 tennis ball size slicing cost me $2+. Roma toms are a bit cheaper at just $1.25 lb.
@@BackyardChef I wondered the same thing, but I think canned tomatoes are already cooked and you stir fried your tomatoes leaving them a little less cooked. I'm sure the fresh tomatoes rocked your dish to the next level.
