      Oh ya and without that pipe I can hardly be in the garage with all the doors open because the LSG will smoke a person right out of there in a couple minutes!!! hahaha I was very happy with this prime and glad I decided to film it even if it held Thanksgiving up a little for the family. But once I brought it in they didn't complain one bit that we ate later than we expected!!! Thanks for watching brother!!!

      Heck ya Eric and I am just happy I filmed this cook so during Christmas when I get a little drunk I got something to use as a reference so I don't get blamed for ruining Christmas dinner!!!!! hahaha Honestly I have used this technique several times and just learning the temps when to pull stuff and how long you rest things is key!! But man that PS Seasoning for the crust and the LSG pellet grill pounding the hickory smoke made this cook complete!! Thanks for watching brother and Happy Holidays!!!

The way I rotated the prime 90° every half an hour balanced it out and was almost like how they turn out in a roaster oven!!     I cooked a 4 bone-in choice rib roast for Thanksgiving. I somewhat followed Alton Brown's Standing Rib Roast instructions.
    I let the rib roast sit in the fridge for about 36 hours with a dry salt brine. Day of the cook, I set it out for an hour at room temp. Seasoned it with garlic powder and freshly ground black pepper. Put it in the oven at 250 F for a couple of hours. I had to turn the oven up to 300 F to hurry up and get it done because I had a hungry brother from out of town who had been driving 9 hours. Took it out of the oven for about 20 minutes when I got an internal temp of 118 F. Cranked up the oven to 550 F. Put the rib roast back in until 125 F internal temp was reached.
    Holy cow did it turn out good! The spinalis was, I would say, a medium well and the center was a perfect medium rare. Still, the whole rib roast was juicy, tender, and a thoroughly enjoyable. All I could I think was, "It can only get better from here if I use a pellet grill/smoker next time." Even though I don't have a pellet grill/smoker, my experience was a positive first attempt at tackling a sizeable piece of meat and it taught me the usefulness of dry brining.
    My dad has a PitBoss and maybe him and I will use it to cook a (prime) rib roast for the family for Christmas. I always look forward to cooking with him because I'll buy the steaks, if he let's us use the PitBoss (He always takes me up on that deal).
    Ricer, you did it right every single step of the way! I hope everyone who partook in your prime rib enjoyed it and had a wonderful time.

    Wow! Good trim and tie job is what makes a difference between a good prime rib and amazing prime rib too many people think that extra fat and bones on the outside of the meat is somehow adding flavor. Which one was better The pellet or Santa Maria?

      Thanks Rusty!! Man that is a tough one but I would say the pellet grill had a lot more smoky flavor!! But the Santa Maria had just a little crispier bark. But if I had to pick one I would lean towards the LSG pellet grill. Plus the pellet was medium rare all the way across the roast!! Like always bud, thank you for watching!!

    Beautiful! I noticed the temperature swings alot on the lcd readout so what did the analog gauge read on the cover?

      With the firepot location underneath the chamber along with the programing on the FireBoard controller the Lone Star Grillz pellet grill this pellet grill never stops smoking but the Tel-Tru on the lid swings around 20 degrees. Inside the chamber I have about a 10 degree from left to right. There are more cook setting options coming soon for the LSG but they are still in beta. Sounds like the next one is a grilling option. Best pellet grill I have had to date. Thanks for watching!

YA I had to add the Donger bro because it is cold up here now and I like to staying a little out of the frozen tundra!!! hahaha That was the best prime rib I ever did on a pellet grill and I have done many!! But the LSG made it a lot easier to do for sure!! Plus WOW that smoke flavor!! I suck at the taste test part and always forget to say crap but man that thing tasted awesome!!! Can't wait for Christmas when i do another one, seriously I thought about one this weekend but bought a tenderloin instead!! hahaha Thanks for watching and the countdown continues for you and getting closer!!       @@DeadBrokeBBQ wowzers another grill so nice and an offset. The time and attention to babysit that fire is a bit more than i want at this time. Maybe down the road possibly.... i called LSG and see where i was at and it looks like in February towards the end will be my time. So maybe the beginning of spring I'll be cooking.
      Have you done or do you have a plan to try venison on the pellet? I always wondered if its possible to do without drying it out.
      No worries on the taste part your videos are so good i don't even notice. Great job

    I'm throwing my hat in this ring.... so to speak. I'm going to follow this recipe to a T for Easter dinner tomorrow. I already have mine salt brining away in the fridge, and I'll put it on my smoker tomorrow. I don't have an LSG, I just have a Pit Boss- but she's been very good to me so far!     Amazing cook and instructive was usual.
    How long did the pit take to get up to max temp from 225? Never been a fan of removing my cook when I try and bump up the grill. Just curious.

      Ya Jerry I hope you get yours soon brother!! Ok it took around 15-20 minutes to get it maxed out but I had another 15 because I forgot to burn it out before this cook and the last cook was 4 chuck roasts and greased up the chamber. Normally I think plan for a good 20 minutes, it won't hurt the prime if you tent it and keep it in the house for a bit. Like always thanks for watching!!
      Ps.. I placed my order today for my 24"x40" LSG offset. Be a while before it is here but really want to get back to stick burning on those perfect Wisconsin spring days!!!

      Glad you found and enjoy my channel Tyson!! I do not rinse off the salt brine. That salt melts and penetrates the prime so adding a little is ok. Plus this is a large piece meat and it can handle a little extra salt on the crust! I do most of the time use unsalted butter when I start crisping up that crust. If I do not have any I just use regular salted butter and I do not notice any real difference. Good luck and have a great cook!!! Happy Holidays!!

    Do you wash off the salt after the salt brine? And before seasoning the meat

      No Ray, leave the salt do its magic! It penetrates the meat and gives it a much better flavor! Then top it off with some flaky rub to develop a nice outside crust! This is huge cut and can handle the extra salt but you can always cut back a little on the other rubs if you don't like a salty bite on the crust! Thanks for watching!!

      @@DeadBrokeBBQ question for you. For higher low end pellet grills would you recommend the req tec 1250 or the pit boss pro 1600 elite all stainless? Whats a better pellet smoker?
      Of course none are a lonestar but....

    I would like to know more about your smoke exhaust stack I live in North Dakota we’re about five months of the year it’s quite chilly outside

      I have 3 power exhaust fans. 2 are around 2,000 cfm's. 1 is a window exhaust and the other is a big roof exhaust. The one with the donger is 900 cfm's and is attached to a 8" pipe chimney vent out through the roof. Thanks for watching!

    In this video you use PS Seasonings Chop Shop. Did you grind the amount you wanted or did you not grind it and use the seasoning right outta the bottle?

    2 queations. 1- i have a pitboss 1000 and fire box is in middle and im going to smoke a 18lb prime rib, should i put it to the side if it fits, or put it in the middle.2- i also have a bruinswick vertical should i use that better, in the middle rack. suggestions ? thanks

    I'm looking to get the Pit Boss and I'll feel you have the best knowledge on these. Have you seen any issues with grease leaking past the tray or issues with the sear section. Thanks for the feedback.

      You will get a little grease in the bottom of the chamber but I get that in all my pits. I never have had any issues with the flame broiler but on my old 1100 I did have some flare up in the back right hand corner a few times from grease not escaping fast enough when I was doing some prime ribeye steaks on it. Hope this helps Mike but I clean my pits after every cook and really never had any issues with grease. Thanks for watching!

      A pellet grill can never over smoke any meat! This one darkens poultry like my old offset did but it never will over smoke anything! This pit is designed to be a smoker not just an oven. When a company that has been building offset stick burners for years decides to make a pellet grill, this is what you get, a "Smoker"! Thanks for watching!!

      I don't remember the weight on this one, sorry. I always plan for at least a 1/2 pound per person on any meat I cook. If you have some big eaters bump it up a tad. Thanks for watching and this is always my go to way to cook a prime rib!!!

      Yep without rotating I never have had the whole roast a medium rare. If you start watching more new prime videos you will see other dudes are starting to use my method. But most of my prime video are pretty much spot on. Thanks for watching and Happy Holidays!

      Well #1 I need to do cook videos on the LSG
      #2 the location of the firepot on the LSG is placed in the best spot to cook a prime rib to perfection. You just have to rotate it 90° so you get even cooking. The Pit Boss is directly below in the middle and that sometimes cooks the outside quicker and the center is still underdone because radiant heat. Thanks for watching!!
