what's interesting about red velvet cakes, is that because chocolate bars were more expensive in the 1930s, bakers used raw cocoa instead. the reaction in the cocoa to the acidity of buttermilk made the batter turn more crimson. while not insanely red like known, it's still kinda cool how the chemicals reacted into a color change from chocolate brown to a rusty color.

That 70`s cake comes from Germany originally, it is called "Schwarzwälder Kirsch", Black Forest Cherry cake (the Black Forest is an area in South Germany). It is still very popular in Germany.

you count per 10 years, so he counts the 1920, 1930, 1940 etc. Thats how you get 100 years (10 x a decade).
