If you put leds in parallel with the same resistor value as others they should stay the same brightness as a single led with the same resistor value. But I think you made the right choice using one as an Arduino output pin most likely can only supply enough power for one.

What are the specs or part number of those LED strips used for the back lighting?
I don't have the exact article anymore. But you have to search for 5050 LED strip, not waterproof, warm white and 60 LEDs per meter.
