- It’s the 90th episode of It's Alive with Brad Leone and our guy is still on location in Montana spending quality time with MeatEater’s Steve Rinella. As loyal viewers will recall, the gentlemen hauled in a fine catch of whitefish on the Yellowstone River in our previous episode - and now it’s time to hit the kitchen. We're brining, we're smoking, we're stewing, we're making dips and tomato bakes. This Montana trip is shaping up to finish on a high note.

I know the feeling. Walked up the stairs at my father's place just last week and felt something popped in my lower back for no apparent reason. Had aches for days. The human body isn't meant to last more than 25 years I think, after that it's quickly downhill.

@@TJ-bg4fw I was wondering if Brad was starting to wear on Steve. Brad's got this off-the-wall energy that might not mix well with Steve's down to earth and composed personality.
The best way to add sweetness to a tomato sauce is grated carrots. the quicker you are cooking it for the smaller you grate them and they leach out so much sweetness that it's like adding sugar but healthier and adding the beta-carotene. I always add it to my pasta sauce.

sugar is a good way too, carrots also add carrot flavor and change the texture. sometimes you just want sweetness and thats what sugar is. sometimes you dont have time and sugar is faster. nothing wrong with adding sugar for some sweetness, just like adding acidity or adding salt or adding heat.
Great tip for anyone aiming to not incorporate more things that are bad for them into their diet. Cooked carrots are a pretty gentle flavour too tbh compared to what awesome tomatoes bring to the table.

My dad has been smoking whitefish in western Montana since the '70's. We would go fishing for whitefish during the winter when trout we're out of season. I really enjoyed watching this!

As a kid, I grew soooo tired of whitefish. We took them in nets (up in Lappland, Sweden, 80's). Nowadays I find myself to actually longing for whitefish. Gotta get up there to fish sometime!
