- We're back with another episode of It's Alive and this time our man Brad is living a little bit of “la dolce vita” by making some fresh mozzarella. Now, seeing as he’s never actually tried to make mozzarella before, Brad decided to call in a hand from his buddy Cody Reiss (@codyreiss), a globe-hopping, cheese-mongering virtuoso you may know from “Cody’s World of Cheese.”

I like to imagine Brad and Cody met in such a weird way. Like Cody was on a spirit journey in the woods and meanwhile Brad is crashing through the forest with a cast iron skillet and a mason jar of fermented chillis. Then they bond over Grateful Dead songs and camp fire food. Friends for 30 years

In the early 80s my dad owned a pasta shop in Orlando FL and all the years that I was a chef I never made any mozzarella cheese so one day at the shop I was visiting and my dad said come on we gotta make some mozzarella I said OK my hands hurt for days afterwards between the boiling water and having to stretch the cheese and mold it I'd rather buy the fresh mozzarella in the store even though it tasted fantastic. But we did make some fresh mozzarella ,prosciutto and mortadella tortellini it was fantastic in a brown butter sauce topped with shaved black truffle and lecotelle Romano cheese Mmmmm.

so like im 64 and my grandfather made the best bread. when we would go camping the raccoons would always go 4 the oranges and the bread 1st. He also made cheese. now this is a guy who was the asst state atty general of a southern state. his cheese molds had to be specially made as there were no such things commercially available at the time, i use them and have come to appreciate the craftsmanship of the molds. the 'lids are carefully weighted and the overall workmanship is amazing. they date to about the late 1950's and i also have his "bread bucket", a contraption that looks like a bucket with paddles that u crank, thereby kneading the dough. he was famous for his bread and justifiably so! I mean Raccoon approved right?

You can make queso fresco, or add salt and make queso ranchero and mold it to dry, or you can make requesón (cottage cheese)
