I’m absolutely riveted by this. I’m a knitter, embroiderer, and sewist among other creative pursuits and while I’ve never been fond of lace particularly, I’ve never seen lace like this before!!!!

What's that technique called of essentially making a knot through another section of the lace? Is that to join sections together?
The technique is called "Einhäckeln" in German. It is used to join the different parts together, as you said. 🙂
In English it's called a "sewing"
