So, not certain if you do comments, but I absolutely LOVE Danish Brunsviger, a soft cake with a brown sugar topping, I have had loads of struggles with making my own, they never get anywhere near the bakery cakes. I would just love to see/hear your take on this!

The lady figures are much like our Scandinavian kringla or Dutch letters I also have used that works great for just about much of simple baking needs cake flour or kosher cake mixes all major food stores have them cake flour makes great pastry dough but for kringla adding sour cream and almond paste this brings me back to my childhood memories my mother made them the lady fingers with my grandmother came to visit thanks for the ideas to remember my memory

The Tiramisu Recipe was phenominal. So is this Lady Finger recipe BUT you will need to double the batch if you want enough for a 9"x13" pan to have enough for the Tiramisu recipe. I made a 2nd batch of Lady Fingers immediately when I realized it was NOT going to make enough lady fingers. Both recipes are "Ah Mazing" as he says. I dusted my lady fingers with dark cocoa powder instead of icing sugar and cut back a wee bit on the sugar in the recipe. Also, these are not as dense as the store bought Lady Fingers so only needed to dip them for a quick second a side in the cold strong espresso. BOTH recipes are KEEPERS!!!!
Just made this! SOOO good. I made 2 cake pans (8x8) as just 2 super large cookies. And with a bit of remaining batter made a couple fingers. Fingers taste great!! I'm going to use the 2 super large cookies for your tiramisu recipe! lol, I'm just lazy and hate piping bags and thought I can just layer it like a cake this way, with the custard as frosting.
If you can't get a smooth texture in the 'batter', since the white are the main airy portion fo the recipe, i recommend blending the flour into the yolk-sugar mixture first, then fold the whites into that.
An old timey kitchen tool* is perfect for folding into beaten egg whiyez w/o any defating of whites. * It is a wire frame LARGE spoon and where the "bowl" of the spoon is are horizontal, spiral lines of wire. Easily found at antique shops.
Im thinking about trying to make some of these for some tiramisu. Ive made it almost completely homemade and if I did the cookie part myself I could do it completely from scratch. Plus I have chickens so my eggs are incredibly fresh.

Can you substitute all purpose flour by using 1/2 Almond flour and 1/2 coconut flour? Would these still be light enough to not cause the cookies to collapse? Also, would 1/4 teaspoon of baking soda and baking powder help or hinder the final product?
Ingredients:

If you don’t have a piping bag, can you use a plastic bag with the corner cut off?
