  • Mom's Jamaican Fried Chicken
    Ingredients:
    Chicken Seasoning:
    3 Lbs - Fryer Chicken
    1Tsp - Salt
    1Tsp - Garlic Powder
    1Tsp - Black Pepper
    1Tbsp - All Purpose Seasoning
    1Tsp - Paprika
    1/2 Tsp - Pepper Flakes
    For frying:
    2 - 3 Cups - Oil
    1 Stalk - Scallion
    1 - Scotch Bonnet Pepper
    1 Clove - Garlic
    Chicken Coating (for frying):
    1 Cup - All purpose flour
    1/2 Cup - Corn Starch
    1/4 Tsp - Paprika
    1/4 Tsp - Garlic Powder
    1/4 Tsp - Black Pepper
    1/4 Tsp - Salt

    Steps:
    1. Wash the chicken, drain and pat dry.
    2. Add all the seasonings under the 'Chicken Seasoning' section and rub well.
    3. Marinate the chicken for 3-4 hours or overnight (Make sure to bring the chicken back to room temp before frying)
    4. In a ziplock bag, mix the flour, cornstarch, and all seasonings under the 'Chicken Coating' section.
    5. Heat oil in a pot on medium and add a stalk of Scallion, Scotch Bonnet pepper, and garlic to the oil.
    6. Place the chicken pieces in the flour mix and coat well.
    7. Once the oil heats up, drop the chicken pieces in the oil. Wait 2 mins and place the lid on the pot.
    8. After 5mins, turn the chicken and place the lid again on the pot
    9. After 5 mins, remove the lid and allow the chicken to cook through and get some colour turning occasionally.
    10. Once cooked, remove them to a wire rack so they can retain their crispiness.
    11. Be sure you cool down the oil a little before adding a new batch.
