Well I tried an alternative recipe with homemade blueberry filling and two layers and it was not good 😌 I think I will try the jam and smaller squares of the Fillo .

If your not sure the egg ratio just use butter, apply it at the bottom and top of the pastry. It's good for the sweet stuff, and savoury, if you have a look at some French pastry all they do is fold layers of butter into pastry, it all depends on the flour to butter ratio, in the pastry, the folds of butter in the pastry the more crisper and flakier it gets, with pastry it's all about the folds of butter in it while your kneading it, I use to make these palmiers, (French pastry) but I made my own pastry, it's like puff pastry but more butter in it. And its hard to make that pastry cos ther is more butter then flour, so it's just basically butter your rolling, I always had to refreeze it to get some solidness back to it so it wasn't just a bowl of melted butter I had to work quick folding the layers of butter into the flour. That is hardest about that recipe the kneading of the butter and the flour keeping it unmelted.
I am all in on the furit pastries. Use fresh peach 🍑, as well as using the others with fresh furit (as was done). Just a little twist for me, they will be vegan. Happy Holidays 😊😃🎄☃️🎅🤶🥂🍾 stay safe.
