Some lassis I tried were not refrigerated or cooled so the microorganisms may have been there swimming in the warm lassis. Got diarrhea from that and ended up at the hospital. :(

It is simple just don't take away the "malai" from the milk set the yogurt with full fat milk you will get the "dahi ki malai"at top like them and dahi will be much creamy.
You will need buffalo milk...7.5% fat.
Cow is only 3.5%...but you could manage with it.
Just buy a full fat Indian yogurt, add sugar n ice ..lassi at home

Why Indian street vendors' scrapping and squeezing ready to serve food with hands? Sure all countries touch their ingredients with hand before they cook their food but most of the street food in India are touched and squeezed before serving them. I saw pani puri and thinking why squeezed the potato with hands, when you could use potato smasher or pestle or even fork? Why mix rice crisp and wet ingredients with hand when you could use spoon? You could just pour the yoghurt neatly without spilling, therefore no need to scrap with hands and there's spatula available..

Looks good on a hot day. Nevermind he uses his hand to scoop and push the spilled yogurt back in the container. What I avoid that I see in other countries is the "one dunk of the glasses in a bucket of water,its clean" method.
