    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on TH-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine.     Tempura with corn starch only is a great Gluten Free meal/snack... thx for showing how to spread the starch over the bones!

      Corn starch is the best fish coating for sure. Pickerel, basa, sole, halibut, etc... All good fried in starch.

    Biggest issue I face when making dishes with so many components is that the food gets cold by the time I actually finish the dish.. 😔
    So, I just serve and eat while it's hot. Straight from pot to plate 😋

      I think he wanted to show a reality that probably gets overlooked, especially because they had to improvise with this particular fish, because originally they were going to do a sashimi/sushi dish with it

    Curious as to why you didn't freeze it to kill the parasites? Does it change the texture/taste, or simply not necessary?

      Freezing to kill parasites requires freezing the fish to an internal temperature of -4°F for at least 7 days to kill any parasites that may be present. Home freezers are usually between 0°F and 10°F and may not be cold enough to kill the parasites. Also fully cooking the fish like he did here makes freezing just necessary.

      Yes. Cooking the fish adequately destroys the parasites and its eggs and makes it safe to eat. Flash freezing the fish and then keeping it frozen for I think it's 15 hours at least (or was it 15 days...I don't recall) will also kill off the parasites and destroy the eggs.

    Hiroyuki Terada and anyone else that sees a fish with parasites - Cook it so it's safe to eat. When Kimagure Cook sees fish loaded with parasites, he complains that it stinks, makes thick cut sashimi out of it, and says it's delicious.

      You cook them or freeze them to negative temperatures for a specified length of time outlined by the FDA. You also clean the workspace. That's literally all you do to deal with them. That and remove the big ones.

      From seafood health facts: "All living organisms, including fish, can have parasites. ... They are as common in fish as insects are in fruits and vegetables.       Anyone who's spent millions of hours cooking fish, like Hiro, or people like me, who have worked in harbours, on trawlers, study marine biology, pests, parasites. All parasites die when deep fried. Hiro works with the FDA ( or whatever its called in USA) to keep Sushi lovers aware of how to freeze fish for sushi. Or discard it for the deep fry. Its a worry for every Sushi fishmonger, its easy to buy a fish for 50k, but if it has worms, then you've lost 40k, in and eyeblink. Bless up yaself!

    Used to work for a sushi place but the fish would be wild caught, so they were susceptible to parasites, we would get fresh fish and they would be stored for 1 full day in a blast chiller, it would chill up to 330 lb. of food from 70 to -8 degrees Fahrenheit in just 15 minutes. It would then be defrosted in our refrigerator, after reaching 10 degrees Fahrenheit the fish can be used and prepared, during this procedure the fish are washed and dried.
