This easy coconut cookie recipe requires very simple ingredients.
Coconut Cookies are great after-school snacks or easy family night treats
Coconut Cookies Recipe
for 30 cookies
Ingredients
350 gr. all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
225 gr. unsalted butter, softened to room temperature
150 gr. brown sugar
80 gr. granulated sugar
2 large eggs
1 and 1/2 teaspoons pure vanilla extract
2 cups toasted shredded coconut, plus 1/4 cup more for rolling the cookies
