Its specifically for sashimi though, they only want the nice marbled meatier cuts. I'm sure they will use the extra trimmings and bones for a stock or in some other dish.
Kalma boys I'm kitchen staff. My kitchen even not that big and professional but we clean as fuck. I think it's depends on who controling kitchen. If head chef is clean then everybody is clean.
