Music is a very integral part of Philippine culture and you are witnessing it. You were in the Philippines with Brad and you were surprised that singing; Karaoke, is everywhere and that is how they LEARN to sing. It must be the water you once mentioned...ha..ha..ha... Please listen to Daryl's cover of 'Ordinary People' and I promise he'd do all kinds of runs. Also, their WishBus performance of 'Kung Maibabalik Ko Lang' with Bugoy and you'll see how well synchronized their voices are.
Regarding the smile-like expression when singing higher notes, it was how my daughter was taught in music school. The explanation is that it also helps to create space horizontally and it is less pressure in the throat while still hitting those high notes.

I think the reason why Filipino singers open their mouth that way as you have noted here is to modulate their voice to produce a certain sound, maybe a similar sound to the original singer of the song. Personally, i open my mouth that way too to produce a modulated and more controlled sound when singing. But if I am to sing an OPM song (or theater or opera song which i dont)my mouth would be more open like how you would when you sing. Mainly because our language has so many " A" (pronounced "AH"). I dont have any music training. Im self taught . Our love and passion for karaoke serves as our music teacher. Imitating the original singer of the song helps us discover our voice. That is why it is common for Filipino/Filipina singer to be able to sing different genre of music because of the wide variety fo songs available on karaoke ranging from as old as1960's to present times. Filipinos develop their skill and talent through experimentation, practice, listening, playing around with their voices/the song and the sheer love for music. They discover and develop things along the way through that and not through the help of a professional voice coach. Foreigners always point out it's taught or coached coz perhaps that is how you do it in your country(to go by the book), that's why it's hard for them to comprehend how pinoys do it. The easiest way for foreigners to find the logic behind it is that filipinos have undergone voice lessons etc. But you see most filipinos dont have that privilege to hire vocal coaches or take voice lessons. Most, will only have that opportunity in terms of technical aspect once they are already in the industry, coz now they can afford it and then having that combined, you have these exceptional singers. Maybe experimenting on your own is the very reason why a lot of filipinos can sing, the posibilities are endless. But when you take a voice lesson first and at a young age then you limit your brain and yourself to get out of what a voice coach has taught you and the technical standard should be. Your brain is programmed to only do this and that to get to this and that. It isn't the case in the Philippines.
Appearance consciousness plays a part in singing without opening your mouth wide. Some Filipinos do not like what their face makes when they sing that's why, like Daryl Ong here, probably doesn't like his facial appearance when singing. It's probably more of a habit that he got before he became famous.

Try to check the Filipino alternative rock group Hale of their song The Day You Said Goodnight. The same mouth openning or more weird but the sound is great.
Daryl is a good singer but I suggest you listen (probably no video for it) to the original OPM (Original Pilipino Music) version by Ric Segreto. No runs necessary but it’s really nice to listen to it. Ric was a half American half Filipino who was discovered in the Philippines because of his good singing voice. Try to listen to it. 😊
