Just received the Noma mushroom "garum" and I'm equally underwhelmed. For 10 X mushroom flavor try Yannick Alleno's cold extraction method. Much tastier and more versatile since there's no salt. I have a great deal of respect for what Noma has done over the years (just announced that they're closing) but this product is not worth the price...imo
$24 ? and only good for 3 months? I think I would try to make something similar myself. Throw some mushrooms in a food processor,add a tiny bit of liquid smoke,aminos,soy sauce. Maybe throw in a capsule of probiotics and leave on counter overnight to culture/ferment. Not sure it would work but worth a try.
Why wouldn't they add sea vegetables to this? It's _supposed_ to taste like rotted sea thing! I'll just stick to plant-based condiments from the Asian groceries. Thanks for posting!
It’s not supposed to taste like fish sauce, they have revolutionized making garum from other things .. plant based. Mushrooms have an insane amount of umami flavor
@@noahbfromthe9136 But garum is made from rotting fish carcasses. It doesn't taste umami; it tastes like fermented fish with umami notes. Otherwise, it's just mushroom ketchup, which is a separate thing and tasty. If you want to replicate fishy things you have to make them taste fishy. I say this as a vegan who doesn't miss fish, but hates mislabeling for marketing purposes.

Just opened a bottle and tasted. It really does need more funk. Much lighter flavor than I expected. Not sure why but I also expected a thicker liquid. I wonder how well this freezes?
In place of soy sauce maybe but I don’t think this stuff delivers on the same level as fish sauce. It’s basically slightly mushroom flavored shoyu with a little msg added then watered down a bit.

If you're missing fish sauce I have a brand to recommend to you! Although I'm not sure how easy you could get a hold of it as I'm Australian and so is the product. It's the "Red Lotus Australia" brand and they have a vegan fish sauce and vegan shrimp paste, both products are based on soyabeans, and both are incredibly similar to the real thing (at least from what I remember). They're not _exactly_ the same, but I was pretty shocked when I tried them. The shrimp paste is extremely funky. I bought them online from an Australian vegan store, so you might be able to find them online somewhere that will ship to the UK.
Because it is a fermented sauce, just western latin(literally latin, btw) instead of coming from south east asia or east asia and the most common version is made with fish, i dunno why you would switch to a mushroom-based garum unless you want to go vegan, but even then, there is the shoyu sauce, which is made of soy
what the fudge?! that's just mushroom soy sauce an actual product that is very readily available. it doesn't, shouldn't expire if stored and used properly

Just get some shoyu sauce, msg and you’re pretty much there. The mushroom flavor is super light.

I made mushroom garum on accident trying to ferment mushrooms.

Garum is a fish sauce and that trash contains no fish. Just call it mushroom ketchup and be done with it
Garum is a FISH sauce........ contains fish and salt, no mushrooms and definitely not VEGAN. So you are doing a video on mushroom sauce
