  • I mixed the dough with bamboo charcoal powder and rolled it up and baked it. It's like a fluffy roll bread.

    ◎Bamboo charcoal spiral bread (6 pieces)
    Strong flour 250g
    Salt 3g
    Yeast 3g
    Milk 80cc
    Lukewarm water 85cc
    Honey 30g
    Butter 40g
    Bamboo charcoal powder 5g
    Topping
    Dice almonds
    Dried cranberries
    ① Put all ingredients except butter into kneader and mix at step 4
    ② When the powder settles, tear off the butter and add it. Knead for 10 minutes at step 6
    ③ Divide the dough into 1/2. Return one half to the kneader and add the bamboo charcoal powder and knead.
    ④ Combine the white dough and black dough so that the dough is stretched.
    ⑤ Put a divider in the bowl with cooking paper and arrange the two types of dough.
    ⑥ Cover with plastic wrap and a wet cloth. First fermentation at 40 degrees for 20 to 30 minutes. Until the dough doubles in size.
    ⑦ Once the first fermentation is over, put flour on your fingertips and do the finger test. If the hole does not go back, fermentation is complete.
    ⑧ Then Release the gas from each dough, roll them up again, cover with plastic wrap and a damp cloth, and let them rest for 10 minutes.
    ⑨ After rest time, roll out the two doughs with a cotton swab. About 35cm x 24cm.
    ⑩ Place the two colors on top of each other with the color you want on the outside facing down.
    ⑪ Roll up the long side. Cut into 6 equal parts with a scraper.
    ⑫ If you have a mold, put the dough into it. If not, use a madeleine paper cup, or simply place on a baking sheet lined with parchment paper.
    ⑬ Second rise at 40 degrees for 25-30 minutes.
    ⑭ After the second rise, brush with milk. Add toppings as desired.
    ⑮ Preheat oven to 200 degrees. Bake at 200 degrees for 12 minutes.
    ★ I like to make a lot at once, so I use 500g strong flour for the white dough alone. I knead the two colors separately using 500g of strong flour with bamboo charcoal powder.
