Well done, man! Thank you for being cool and not trying to be a tough guy and slapping all the food around like so many other food TH-camrs. Did that make sense?
i was thinking the same! i noticed how delicately he used the knives and thought, “does that mean this is “feminine?”. but no. he screams suburban dad. which is just more approachable than “*slams onion onto table**cuts it in half with one swing*”
I came here to say this. A laidback South American cover of Serge Gainsbourg is apperently exactly what my Sunday needed. Anyway, I tracked it down: it’s translated as “Yo Te Amo. Yo Tampoco” by Venezuelan group Conjunto Santanita. It’s here on TH-cam.
I like that this shows the strength of having some things laying around so you can toss together a really strong dish. He didn’t have to whip up the salsa or sauce, he had that prepped. Awesome.
" je t'aime ...moi, non plus" is The background somg originally by serge gainsbourg and brigitte bardot I don't know who did thg his version but it is really good!
My abuela always did it where we shallow fried tortilla wedges and then scrambled in the eggs after they got crispy to then drown it in cheese and salsa once it was all cooked
Is there a name for this process? Pan fry and steam finish? Like, we have over-easy, over-hard, scrambled, but is there a cooking term for pan fry, no flip, steam finish eggs?
I tracked down one that sounds similar from a brilliant Brazilian composer, but his version is definitely a Latin jazz take and I can't find it. th-cam.com/video/WSYgfsvLcQ8/w-d-xo.html
I do not have Instagram so I appreciate you posting here! 🎉 Also, I never had chilaquiles in my life (never been to the American continent), so I appreciate you filming even after writing "you can be on your own from now" or whatever after cracking the eggs😅
chilaquiles isn't easy to find in my state! I found ONE place that makes them, only during breakfast hours, and they were inside a indie quick mart and only took cash. I never went before I left the area :(
I just played a video game, Spiritfarer, where this was the favorite food of one of the characters. Best way to earn happiness from the dude but I had no idea what they were. Now I know, I think someone gifting me a plate of these would make me happy too
I gotta say I'm of mixed opinions on shorts in general but I hear they really drive the views, and this one is just beautiful. I've tried chilequilles a few times and think I'd probably like them better if they were less soggy and more crunchy. This makes me think i ought to give them another try.
@@lorenzofuentes3021 I live in an area where Juanita's chips are plentiful and cheap. While homemade most things are better than store-bought, I can't fathom doing better than Juanita's! Sadness, though, it's been three months since this video and I still haven't tried chilaquiles :(

About an hour ago I ran into a cooking video with the hardest, quickest cuts and the cooking noises were loud and sharp. All of it was to keep in beat with the music. It was the most sensory awful cooking I've ever seen and it was tagged as ASMR. If that video was the disease, this was the cure. And now I know how to make chilaquiles, which I was only vaguely familiar with. So a win-win!
When I saw you add the water to the eggs to steam, I literally felt vindicated from all those around me who give me sh!t when I do it every time I fry eggs! Thank you! So glad to know I'm not the only one and I'm not a f**king weirdo! Lol
You gotta give the original a listen. That the song is to make babies with! Je T'aime-Moi Non Plus by Jane Birkin and Serge Gainsbourg. He does a version with Brigitte Bardot but Jane's is much better. After all, Hermès made the Birkin bag in Jane's honor.
Just tried to make this myself! Or approximate it, anyway. Tomatillo salsa, and I used a canned enchilada sauce, with half a diced habanero added for some kick. Was good, and filling.
Honestly, I prefer my chips extra crispy so I usually get a bowl of chips and then I put my salsa over the chips and then I mix it all around. I throw an egg on top some cheese that way keep it crispy.
Last week I started posting this style of video to IG (@internetshaquille)
I wanna see how they do as “shorts”
But your wearing "longs"
I hope it performs well so you'll update other videos :D 🎉🎉🎉

Style reminds me of Chuck Cruz (in the best way possible)
Love this one! What ingredients did you use? What did you put in with the eggs? Is that butter you put in the pan… Please 😊
Finally a video that’s filmed normal. No fast paced cuts and I can actually absorb the ingredients and method
I mean, he has a masters in instructional design.

Get tortillas and cut them into triangles. Pan fry them until golden brown. Now you use that instead of store bought chips.
