Andrew, first of all I have been a fan of yours since you were just a lad. When I was in university I worked for a Spanish chef (graduate of Le Cordon Bleu in Paris) and he cooked a dish similar to the shrimp in olive oil and garlic, but with the shrimp in their shells and heads on them. He called the dish CamaronÊs à basques.

Tapas is amazing when done well...the best I've had is the Basque version - pintxos - that I had in San Sebastian.
Interestingly the reason why pork is so popular in Spain is because the native population ate it in larger quantities as a protest towards the Moorish invaders who occupied large parts of Spain for 500 years and were Muslim.
That fact apart...pata negra - the best iberico ham - is the finest in the world! Parma/prosciutto/Jambon de Bayonne don't come close!
