You could easily get two croissants per sheet by slicing diagonally from corner to corner. Then you just trim a small amount from the wide end to square up the triangle again. That would eliminate almost all of the waste.

Try slicing the sheet in a diagonal half and you’d have two triangles and much less waste. Pretty similar to how the Pillsbury crescent roll sheets are set up.
