How to Make Spanish Rice

    Ingredients:
    2 Tbsp. oil
    ¼ Of a medium onion Fine chopped
    11/2 Cups Rice
    3 Cloves finely chopped garlic
    2 ½ Cups Chicken Broth
    1 Cup Plain tomato sauce
    1 Bullion Chicken base
    Directions:
    1. In a medium sauce pan, heat oil over medium heat. Add in the fresh onion. Sautéed for 1-2 minutes until softened.
    2. Add dry rice and cook with the onions for about 5 minutes or until rice becomes a golden brown color. Add in the garlic to the rice and sauté for one more minute.
    3. Add in broth and tomato sauce (add slowly into the rice, not directly onto hot pan!) Stir it up and bring to a boil. 4. Once it starts boiling, turn the heat to low and cover. Let it simmer for 20 minutes and fluff with a fork.

    To those offended about the "Spanish" part of Spanish Rice. It is just what we call it. Not necessarily referring to the country of origin. FYI, Eskimo Pies do NOT have Eskimos in them. Nor did they originate in the frozen tundras. Relax.

    thanks chef. I added some finely chopped cilantro, red, yellow, orange, and green bell pepper. Topped with some sharp Cheddar. ooo heart attack! yummy

      LearnToCook you still neglected to reveal how many cups of broth to how many cups of rice you used. i know the rule is 2cups of broth to 1cup of rice but people have different ways (you'd be surprised).

      Saint Joseph It actually depends on the rice you are using. I've used rice that turns to mush if you do the two to one method, and require a 1.5:1 ratio instead. Maybe that's why he didn't include it.

    Shouldn't the rice be mostly browned before adding onions to prevent the onions from being burned black like in the vid?

    Could you tell me the portions you use. The rice cup per broth is a real factor that makes all the difference and I haven’t been able to figure it out. My rice comes out not cooked all the way, so I’m missing something and I don’t know what I’m doing wrong. Help.

      +Keiki Kipapa Hi, I am mexican and generally use 1 cup dry rice to two cups liquid. I brown the rice first, then add chopped onion, chopped tomato, stir to mix and let it saute for a few mins. Then I add all the liquid, spices to taste - salt, pepper,garlic,onion powder, and cumin, give it a stir to mix. Put the lid on the pan and let it come to a boil, boil for five mins., then turn heat down to low and let simmer for 15 - 20 mins. Check to see how done the rice is - if still a little hard but not enough liquid left in pan, then I add another half cup water, replace lid and let it sit for another ten mins. Your rice should be fully cooked by then.

      Hi, I hope your rice cooks up fine and that you enjoy it. For more flavor you can boil it in chicken broth or vegetable broth rather than water. Also, I forgot to mention to add about 1-2 tbsp of tomato sauce to the liquid, just enough to give the liquid some color. It also taste really good if you use the Knorr brand chicken tomato bouillon granules. To use the granules, you just dissolve them in your 2 cups water and add to the frying pan after you've browned the rice. Let me know how it comes out for you. Daniel

    What was the garnish you put on top? Green onion? No one makes videos on how the techniques to cut up and make them look pretty like you did....can you explain what part of green onion to use? The white bulb end has always puzzled me

      If you don't like tomatoes you can use a red pepper sauce, but keep in mind that the flavor is going to be different.

      +selena vera The rice is not cooked before you browned the rice in the pan. You can use a parboiled rice, which means that the rice is partially boiled in the husk. Usually will be label, and the rice will look dry like any other rice that has not been parboiled, but they will cooked much quicker.

      No. But I rinse it with clear water to take some of the starch off first. But shake it dry before putting it in oil.

      Hi Arvind, there is a good chance they use chicken broth, you may want to ask in the future if they use vegetable stock or chicken.

    This isn't Spanish rice. Its MEXICAN rice. People have made this mistake since I've been around. Mexicans might speak Spanish, but they eat Mexican food, not Spanish food. Please people, get it right. Calling it Spanish rice is an insult to Mexicans!
