I'm gonna guess the "jelly" you ate with the usucha at Nakamura Tokichi is called yo-kan. Not a big fan of it, but it pears well with Japanese tea. I also believe matcha in Japan will almost always taste better because the Japanese people are very picky in terms of taste, plus matcha is grown locally so it will taste fresher/better. I'll have to find a spot like that when I travel to Japan next time!
