Carries 5 passengers ;-) . This is a bespoke build so its been built for a couple so only needs to carry 2 people and will easily carry their 2 bikes. Don't forget this was built to there exact needs. If there was more people they would of started with a bigger van maybe a Peugeot Boxxer for example. :-)
Hi. It was done to fit 2 mountain bikes. I can't remember the exact measurement. But if you look you can see the wheel arch so that will give you a good guide

So what do you do with the mattress through the day when you collapse the bed boards ?? Good idea with the separate boards but only if nothing else is there which is unlikely
Roll it up or fold it 2 and leave it up there which still leaves loads of room for storage. We either fold it in 2 then you can put lots of things on top of it or we put it behind the rnr bed between the back doors. :-) works really well.

What length is the rock/roll bed once flattened? Why would you not underslung the water & waste to free up space in the cabin (and give more capacity)? I've seen other companies offer the rock/roll bed on full length sliders - would be handy as a day van and with a few MTB's (probably just front wheel out. MTBer here too, liking the idea, but it'd be easier with a LWB.
There's pros and cons for underslung. Most customers with this size van have the smaller capacity. It's plenty for this set up ans far easier to fill. For example if you need to get the van right up to a tap or hose that means moving or it might not even be possible. But it's always possible to take a water container to a sink for example. Also maintaining portable containers for cleaning etc is obviously easier. And cost is always to be taken into consideration. The RNR bed is 6foot :-)
Wheels off obviously ;-) have you watched the video till the very end? That's my bike which is a big large. Always going to be a compromise if you want to keep the comfy layout and still keep our prized bikes safe. For 5 minutes taking wheels off this is one way if doing it. Won't work for everyone though.

Rear end is a great idea. Could easily fit a couple of road/gravel bikes in that space.
