I just precooked the pata but it's almost midnight here in El Paso, Texas . So first thing in the morning , I'll predry the pata in the oven as per your procedure then fry it. I'm packing it for my flight to Houston. Pasalubong for my son . Thanks Chef Fern.

pwede naman po kung sa pwede.. kaso un nga po ang problema.. dun talaga sya sumasabog ang mainit na mantika.. ang idea po kase ay dapat maalis ang extra water content nya.. so ang pag-ooven ay isang paraan lang po.. may iba pang paraan tulad ng sun drying, air drying aun po.. 😉😊

Mahirap po magbigay ng exact time ng boiling kc iba iba po ang quality ng meat.. Pero dapat malambot pero hindi fall off the bone level n lambot.. Ung tama lng.. Pwede dn po turbo.. Basta ang idea ng oven turbo ay matuyo/dry ung excess water nya galing sa boiling methed para di sumabog ung mainit na mantika s pgprito.. 😉😊
