I'd say this is a bare metal install that just happens to be in a VM. I've done bare metal Ubuntu and VM Ubuntu installs, and nothing was really different here. The "you're in a VM, things get weird" stuff comes later in the setup process, IMHO, which was out of scope for this video.
I painfully cobbled together my last LTS desktop to install on Raid 0 (for creative editing). Later I learned that Ubuntu Server includes this ability out of the box. Any chance you might make a video showing this, and then how to install the rest of the software to turn it in to Ubuntu Desktop?
I also would love to see a video of getting Ubuntu desktop running. I have an old laptop running Win10 that I want to give new life running Linux desktop
If you encrypt the disk can you enter password remotely to decrypt it so it can boot? Since it is encrypted and not booted you can’t ssh unless it is booted already. So you would need console access to decrypt but I think I read there may be another utility you could install to decrypt disk before boot.
I've put the server on a VM but I can't log into it remotely. Is that because of the install being in the VM? If I use the IP I get timed out. If I try local host, I get "permission denied, please try again" Any thoughts?!

I would use a better hardware version of the vm, TPM and a few more features. New CPU features are always good.

Without remote console access, it's a no. There is an option if your hardware doesn't have the option to use Pikvm for remote console access.
You can use TPM to automatically decrypt on boot or use dropbear-initramfs to be able to SSH into the server before boot and enter the password
