What you're hearing is the difference between him following a recording and the band following him. As a trumpet player, I can't stand a drummer that follows the band.
Yeah I play in a band as a clarinet player. My band's drummer(s) are terrible so drums are very crucial to the band. You know why they say, a band is as good as their weakest players.
That is the difference between messing around at home and playing for a band director. The director will usually reign in some of the gratuitous playing. It is also more exciting to play live for a crowd.
