I have brewed with all those hops and I agree however it would be an interesting experiment to plant these hops in New Zealand and/or Australia and see how the terroir changes their characteristics. Cheers!
I agree with the Summit Hop inclusion. I made a beer with it heavy in the late hop, and it was potent onion garlic. Although when I smelled it out of the bag all I got was powerful grapefruit. It is a really good bittering hop though, and I have used it in pale ales, brown ales and lagers. A little goes a long way.
As a home brewer I really appreciate that you guys took the time to share and explain what hops haven't worked well for y'all because we can all learn as much from what doesn't work as we can from the stuff that works well. Great level of detail in your reasoning/experience with each hop, I feel like based on your input I can better choose when to use or not use each hop, depending on my use case.
Not only we enjoy and learn lots from you about beer but you also broaden our vocabulary with words like alleacious. Thanks for the great content. Cheers Nate!
I’ve never brewed with any of these hops, but my number one choice would easily be Zappa! The most bitter and astringent hop I have ever used. Just using it as a late addition, makes it feel like you’re drinking unripe persimmon and rubber bands. To top it all off it’s often quite expensive!

Treehouse really was my gateway into appreciating IPAs, and definitely changed my perspective on what beer could be. Motueka hops give me goosebumps, in a bad way. I really want to like it, but if i order a beer, drink a sip, get shivers and goosebumps, it is always a Motueka beer.
oh no, just received Apollo! But as a bittering hop for a WC IPA with coffee-infusion. The other hop is Simcoe for late additions. Guess I use little of Apollo later in the boil :)

never learned the specifics of hops, but i always read the info, and considering i dont remember seeing any of these, they must not be too popular here either. my least favorite hop though, are beers made exclusively/mostly with cryo-hops. it's like whisky that has been chill-filtered, removing flavor from the finish... just make a better recipe if they dont like how it tastes ending too bitter haha
My worst hop pick: Northern Brewer. I felt like washing my tongue after drinking the beer I made with it. But as you mentioned, I think Summit is a very decent bittering hop.
Summit's onion/garlic flavor is one of my least favorites as well. To the point that I will completely avoid beers if they have it listed as a hop they use. There was a period a couple of years ago where I seemed to find hazy after hazy that had summit. Interestingly, that sparked my romance anew with West Coast IPAs.
Sitting here feeling cool and alternative. Sorachi ace is my favourite hop - it's strangeness is the key to its deliciousness. Each to thier own. It's the Tom Waits of hops. You guys can keep your "tasty", non-weird popular hops.

I kinda like OG in some NEIPA.. It’s a nice change up but I can see how it would clash with your house yeast expression. Might kinda work the Ferns 🤔. I’ve found it to be enjoyable in the Substance, which they say happens to include Apollo, and Fiddlehead IPA. Although, Fiddlehead seemed to have lost that quality and was more of a fruit bomb when I had it recently, which was a little disappointing. A few popular IPAs are made with Falconers Flight, which I don’t remember you guys ever mentioning. Often hazy beers with Motueka, especially from Tree House, end up being pretty overripe. I’m also sensitive to a chalky quality in Strata.
A few years back when everybody was losing their mind over Citra, I thought great, let’s give it a go. Brewed an all-citra PA, and jt was just flat out cat pee. I’ve enjoyed some lovely beers where Citra was a small part of the hop combo, but on its own I just can’t do it.
Not a fan of Taiheke, which is NZ Cascade. For me, it tastes soapy. Others don't get this flavour from it, but I do. But US Cascade is fine, big fan of that.
I understand the assessment of these three hops. Definitely not my favorites. For me, Nelson and Sabro can take a hike. I don't particularly have a third least favorite that i can think of right now.
Sabro and Talus are my choices. I mostly get “earthy” qualities aka dirt! Or “woody” too. The third hop which has varying results for me is…this is going to p*ss some folks off…citra. Sometimes I get such a strong “cat pee” aroma in beers that I’ve bought and it throws off the whole experience. But I’ve also had some heavy citra beers that have been fruity and nice. But I’d rather it be used as a complimentary hop with higher quantities of others in the recipe.
Stone hop revolver herkules a German hop varietal that smelled like fish or Limburger (sp) cheese, one of absolute worst or top five that even Treehouse could not blend
The one I can never get past is Enigma. It has that gym sock feel and don't know I've found an enjoyable representation yet. Vic secret's woodiness is hit or miss and that soapy coconut of Sabro was one of my biggest write offs until the 'Snow' family of beers! You guys dialed that one in better than anyone else.
Aleatious?! To sum up this video, I think we can expect a "Summit Julius" in 2024, right? "We taste: Notes of garlic and onion, bursting with a bright tropical aroma and a melange of citrus." 😂
My least liked hop by a large margin is Pride Of Ringwood. It has been for many decades the go to hop for Australian macro lager and I can't stand it. It tastes of Iron.
I have had an Ace Saison, and it was just too much. I think adding too many similar flavors can overwhelm the pallet. You wouldn't make a chocolate cake with chocolate frosting, a chocolate glaze, and serve it with chocolate ice cream.
There's an Australian hop called Victoria Secret and....I swear it makes beer taste like the worst, burnt plastic phenolic disaster. I just don't get why it exists

also have not loved our experience with Zappa, but we were able to pull some OK flavors out of it.
The second you revealed summit hops, I was hooked.
I never liked Sorachi Ace, then I found a way to utilize it in a lemongrass thai ginger pilsner with saaz and it balances quite well.
Anyone remember Gubna from Oskar Blues? Pretty sure that was a Summit bomb. Loved it 10-15 years ago.

I made a good cuumber saison that was pickle-like but still good towards the end. Sounds like a job for Sorachi Ace!

CTZ has been great a couple times for me but I think I'm done with it in the dryhop. It can be super onion/garlic a lot of the time.

I like el dorado a bunch. a very finicky hop but I can pull straight tropical fruit out of it.
El dorado is one of my favorites. It’s my cheater hop. No matter what I do with it, it turns out great.

Magnify makes an amazing ipa with Apollo hop oil called Peak Oil 9%
Sorachi ace tastes like soy sauce and dill for me. But really found it interesting in a DNEIPA I had the other day.
I think galaxy is one of the most unreliable hops. Sometimes you get juicy peach, sometimes you get bitter peanut skins.
Went through Dubai airport today and there was a treehouse juice shop.

Good choices. I would add sabro, talus, hbc472 or any neomexicanus variety. Just awful tasting hops, akin to the aroma of moldy orange peels

I’ve never had tree house beer, but it seems they don’t do the dank IPAs and find the hops offensive.

I've gotten nice coconut on sorachi ace czech beers, and citrus with apollo. Ironically the trillium cans I brought there were extreme garlic bombs.
you can definitely maybe pull citrus from Apollo but OG always with it.
