Heirloom's Chef Georges Perrier Collaboration

  • Heirloom's Chef/Owner Al Paris partnered with Georges Perrier to launch Paris' collaborative dinner series celebrating the region's culinary "heirlooms" on Wednesday, November 14, 2012 at Heirloom, located at 8705 Germantown Avenue in Chestnut Hill.
    "Georges is a Philadelphia culinary icon, and a good friend and neighbor of the restaurant," said Paris. "We became friends when I was the chef at Circa across the street from Le Bec-Fin in the early 1990s, and have remained close ever since." The two hung out after work, hosted each others birthday celebrations, and did The Book And The Cook events as well as numerous other collaborations together.
    Paris notes that "Georges is relaxed and the happiest I've ever seen him." Chef Perrier has been traveling since selling Le Bec-Fin last March. "This was one very special meal," said Perrier. "Without the stress of running the restaurant I've found my creative juices flowing. I'm excited to get back in the kitchen and to spend time with some old friends in the dining room."

    Amuse Bouche
    Tartar of November Oyster -- Chopped Farm Egg, American Salmon Caviar
    First Course
    Mussel Soup Perfumed with Saffron -- Lemon Thyme, Shallots, Vermouth, Bay Laurel
    Second Course
    Scallop and Shrimp Mousse with Maine Lobster -- Sea Urchin Cream, Black Morels
    Choice of Entrée
    Medallion of Venison -- Sauce Grand Veneur, Chestnuts, Lardon, Cranberry Compote, Celery Root
    Roast Pigeon with Foie Gras -- Mushroom Cannelloni, Madiera, Cabbage Confit
    Salad
    Organic Baby Mache -- First Pressed Walnut Oil, White Balsamic Vinegar
    Sweet Finish
    Terrine Glace Grand Marnier -- Raspberry Coulis, Fall Fruit, Tuile
