How To Grow A New Kombucha Scoby (symbiotic culture of bacteria and yeast)

  • This video will show you how to make a scoby from just starter liquid / kombucha follow along with the video there is also a shopping list of ingredients needed listed below.

    4 liters water
    1 cup sugar
    1-2 tablespoons of black tea
    1-2 cups of strong starter tea, Kombucha vinegar or raw kombucha

    I grew mine completely from scratch. I just did a quart of water and a quart black tea bag with 1/4 cup sugar and a 1/2 teaspoon of white vinegar in a quart jar. I covered it with a doubled paper towel and rubber band and sat it in my kitchen cabinet. A couple weeks later I added a bit of a ginger ade kombucha i bought but the dark brown yeast strands were already forming. It was a longer process without starter tea.

      glad its working but you want to be careful using vinegar to start kombucha as you can end up with a vinegar producing scoby that may need some extra training to make kombucha rather than vinegar

    How was the first scoby created?

      there are old clay bots and relics that date back over 9000 years that could have been use for kombucha brewing as fermentation is one of the oldest food preservation methods, no one can pinpoint where the first scoby was from but there are many different legends about how it could have come about the most common is simply a fly that was carrying yeast landed in a cup of tea and started off the fermentation reaction. you can start off a kombucha fermentation without using starter just like how you can make wine vinegar without a starter too you just need to leave it uncovered and hope the bacteria in the air can grow a scoby before mold takes hold. hence why its normally started with making the batch more acidic first to help reduce the mold chances, hope this helped :)

    Is what left after you took out scoby in 2 weeks is drinkable Kombucha? You said vinegar so I'm just confused

      it can be drunk but the first batch if you are growing a scoby is mostly for growth of the scoby not the production of kombucha itself

      you could try but flavoring normally comes after fermentation with making kombucha you will have spare scoby in no time to experiment with

    I grew one from an old bottle of White Wine vinegar, as an alternative option for those listed.

      thank you i appreciate the support ive been looking into making my own vinegar scoby for apple cider vinegar and experimenting with other vinegar flavorings

    Wait so do I throw away the tea that the Scoby was in? after the scoby is grown?

      it depends on your taste, when growing a scoby from scratch i normally let the tea get a bit more acidic closer to vinegar so when i make a first batch of booch with it i have a big scoby already but you can always do taste tests while the scoby grows and bottle the kombucha or you can even keep the vinegar for salad dressings etc

    So are you saying if you leave it for more longer the scoby turns back to vinegar?

      the longer you leave it your kombucha will turn into vinegar and become really acidic and sour

      I've read it's black tea...I'm using Tetly Orange Pekoe tea.

    Can the scoby take longer than two weeks?

      like with all ferments it can take longer but you should at least see some growth in 2 weeks

    Hello there. I just tried to make my one Scoby from scratc...i see already bacteria yet is very hairy and greenish...is that normal...?? Or is just irher fungi?? A wrong one😅😅

      it dose sound like a mold issue the top of the scoby should be smooth or slightly bumpy but mostly the same color with no patches

      the starter liquid is basically the acid / vinegar you dont want to use normal vinegar or you can end up with a vinegar mother and not a kobucha mother and if you add yeast it can burn alcoholic, kobucha scobys produce their own yeast in the process of making kombucha
