In the video, the trigoblack is more like a grey-black, but on the online shop, it's more like an ice-blue black. Which one is more accurate?

I'd say grey-black, it doesn't have any blue tints to it.

How would you say the quality of Beuchat suits stacks up against Omer?

If we're talking about the Omer holo stone, black stone, or red stone, in my opinion, they're very close in quality to the Beuchat Trigoblack/Redrock. They're closer to the Redrock as the Omer wetsuits have equalization pads in the hood just like the Redrock does. A key difference though is that the Omer wetsuits have high-waisted pants whereas the Beuchat's are farmer john style pants. The wetsuit measurements should also be different across each of the brands, and one may fit you better than the other.

I'd choose whichever is going to fit you better but if they'll both fit you I'd go with the Trigoblack.
