Because of you, I've ventured and tried a lot of new things I probably would not have tried. I bought 4 of the McDougall cookbooks and 3 of the Happy Herbivore cookbooks because of you. Being new to veganism, you can read a recipe, try a recipe, and even if you're a seasoned cook - they can taste like cardboard. I just made the Applesauce Cornbread today (cooked the millet. I followed your instructions. Was it ever good. paired it with McDouall Minestrone soup (which makes enough for an army; so does the cornbread when it's for one person). Hubby loved the soup but refused the cornbread; he's never liked cornbread. I'm so glad you show recipes your family loves. I know when I watch a Nini video, I am going to try a "Nini recommended recipe". Thanks baby girl!
I halved the recipe and made a dozen muffins, skipped the honey as I don’t like my cornbread sweet. But I doubled the applesauce for the moisture. Also blended the cooked millet with other wet ingredients. They came out great! Husband loved them. Added fresh mulberries to half of them because I had some on hand. Delicious! Thank you for this oil-free vegan recipe!

I'm baking this now and I did a few things different. I'm trying cassava flour, substituted oat milk and I also made my own applesauce (no sugar...just cooked apples and added cinnamon). Uncooked, the batter tastes awesome so I will try a piece before I bring it to our Independent Senior Living community Soul Food potluck. I'm also bringing vegan (no butter, no oil) Black Eyed Peas. I know there will be a lot of foods I won't be able to eat so I'm making this for me and for anyone who wants to find out that eating healthy vegan is tasty too.
Well, it wasn't soon, but I did finally give this recipe a go... it's awesome! Thanks again for sharing it, the cornbread came out wonderful. I've modified a couple of things and will probably do a video of my version in the future. I love the fact that it doesn't require oil (like my previous recipe that I was using). The taste is great, every bit as good as the other one.
I skipped it entirely but used double the applesauce for the moisture. I use unsweetened applesauce and didn’t find it too sweet at all. I don’t like sweet cornbread. I like it more savory.
I made your version and it came out great! You must have a convection oven because all my dishes have to cook longer than what you say. I cooked my cornbread loaf for 90 minutes in a regular oven. Thanks Nini Girl!
fyi I used date syrup for mine as it is still a sweetener but with more nutrients. I'm also trying to see how date sugar does-- later today. I tried whole dates chopped minutely but it didn't distribute well. I use The Date Lady (on Amazon I'm sure). Also mine came out too dry so I'm going to add more applesauce. Let's see what she recommends. Hope this helps!
Your family is so lucky to have you in the kitchen. One healthy delicious vegan dish after another. This might be a dumb question, but would apple cider vinegar work as a substitute if you don't have any rice vinegar?
I've been meaning to tell you how good this cornbread is. We love it. I made mini muffins because they cook faster. I'll try the "bread" style soon. If anyone has asked, sorry for the repeat. Regarding the jewelry, sold the Rolex because it kept horrible time and was constantly slow. I lost my really nice vintage Walden watch a couple of years ago and was completely heart broken. I decided I was not going to loose anything else so I took everything off and just wear the basic stuff. My story is your story. I found this diet just like you found out about it. Maybe I will do a video in the future, we will see. So glad you are enjoying your cornbread. How long do you bake it in the muffin tins?
Hi Nini, whole wheat pastry flour is non existent in the UK, what would you recommend in its place? PS made your pad Thai and baked beetroot recipes both AMAZING!
Hi Scott, I would just use regular whole wheat flour instead. If you think it will be too heavy they just do half whole wheat and half white flour. Hope this helps. Thanks for trying my recipes and thanks for watching!
This looks very yummy! When you were showing the recipes for both of them it looked like the basic corn bread recipe uses the millet as a flour. Do you think that would work in the recipe you used?
Yes definitely, one thing though you will not have the millet texture it will be a smoother bread, not as grainy. I kind of like the graininess when you add the mashed potatoes and the gravy and the cranberry sauce and the lentil loaf OMG OMG hold me back.

Too complicated recipe.Having to cook the millet first takes 30 minutes then all those ingredients for one hour.If you have nothing else to do all day and live in your kitchen then maybe ok.

3/4 cup sweetener? Seems it would be VERY sweet, but no one mentions that.

Any non dairy milk will do perfect. Unsweetened preferably. He says in the recipe that if you use rice milk it will be a little denser, FYI.
