Harry, you're my favorite rap artist. Those ribs look killer! They were cooked perfectly. 7 hours seems like a crazy long time for a rack of ribs. Why do you think they took so long this time? Every once in a while I get a cook like that where it takes for eeeeeever to get done, and I struggle to find an answer why.
I appreciate you enjoying the raps! They are fun to make and the food inspires me to rap about it. Yeah 7 hours was longer than I thought. I think I babied these ribs (no pun intended) by cooking them around 225 for most of the cook. I also didn’t wrap them. Most people do after 3-4 hours or so. I chose not to because the color was looking good and then I wanted to lay on the glaze. Also, every piece of meat is different and may take different amounts of time to finish. Can’t rush bbq perfection!
