That is why I made this video to show that it can be non-stick even with Pam. I use butter or vegetable when I cook food of course. Check out the playlist at the end of this video, or watching the video at any time in the information cards at the top right hand corner. Your heat is good, med.
    Pop those eggs in, salt and pepper right away. Look at the edges of the eggs... when you see them start to turn/crisp; add a squirt of water and cover for 20 seconds. Slide them beauties out of the pan. Like an over-easy, but with always perfect egg-whites. I grew up in a small restaurant ;) If a customer asks for over-easy; 1-2 second flip after that, just for looks. Never any sloppy whites with steam.

    I inherited some old cast iron pans that were in rough shape. I stripped them all the way down to the silver lining using a steel shot blasting booth. I cured them with lard using your technique at 400 degrees for an hour six times making sure to wipe off all the lard like I never wanted it on the pans in the first place. They are starting to get that black color back now but still look a little cooper colored. I can’t seem to get them non stick. Every time I cook an egg on them, it's a disaster. Please help.

    • @CastIronCooking
      @CastIronCooking  4 ปีที่แล้ว

      If you are getting a reddish color when you wipe out your pan after cooking, you still have rust on the pan. If that is what you were talking about copper color. You left a rough surface by using a steel shot. You might not be able to see it but it’s there. Also your pan might be unlevel by doing that if you ever put a marble in the middle of the pan it should stay in the middle if it rolls off to the side or anywhere else it is either warped or uneven. I see a lot of people on the Internet using power tools to strip cast iron down but it is as simple as buying a can of easy off oven cleaner with Lye and a plastic garbage bag. After you season the pan you just don’t run out and throw an egg on it either, you must cook with proteins like I mentioned to build your seasoning. You will know if you wipe all of the oil completely off because if you didn’t the seasoning will flake and come off. If I were you I would just keep cooking proteins and frying chicken r mushrooms or whatever. I have a whole playlist and fried foods if you want to find something you haven’t fried before maybe. So in short red color is rust. Food not sticking is either operator error (because if you do exactly what I do you will get exactly the same results I get obviously) or a rough surface due to using tools. Next time you get a super rusty crusty skillet, DM me on my Instagram of course you saw the link when you were reading the description box below my how to videos to learn how to do cook.Send me the photo of your pan top and bottom and I will teach you a trick that requires absolutely no work to get this stuff off and you can do it inside your home with no tools or lye. I’m going to do a video on it but I cannot find any super rusty crusty cast iron cookware in Phoenix anymore I believe I have collected all of them! LOL

    I have Wagner 6.5 inchs recently seasoned it, i tried to fried an egg and this stuck to the pan. Tried to remove egg remains with the teflon spatula and the seasoning just came off with the egg. The next day i reseasoned it on the stove top with thin layers of canola oil and a free lint rag, i fried an egg 5 hours later after this with the same results. Do you have an advice for me please! Thank you in advance.

    • @CastIronCooking
      @CastIronCooking  2 ปีที่แล้ว +1

      *You didn’t season it properly and probably didn’t maintain it well after cooking either. That’s ok I have a seasoning/maintenance playlist that will show you how to do it properly. It is at the playlist when you make it to the end of this video. Thank you for watching and subscribing if you already have I appreciate you. Here is the link to my Wagner deep fryer pan seasoning playlist is also at the end of it as well. Play close attention to what I say about flaxseed oil. This is not for beginners even professionals don’t use it. It will flake if you don’t know how to do it. I give instructions as well for lard. It’s a dollar something at the store it will polymerize to the pan it will not get in your food. The most important part to seasoning a cast iron pan that everybody messes up on is how much oil to put on. Listen to what I say about wiping off what you put on completely and then wiping it off completely again like you don’t want any on there. I will explain why.I have playlists and videos for everything you need on cast iron and also how to season stainless steel pans. Thanks again!*

    Hi there. I have a cast iron ribbed griddle pan which I use on an electric hob. No matter what I do, my apartment fills with plumes of black smoke whilst cooking which obviously isn't ideal.I have turned down the heat from 9 max to 7, oiled the meat, not the pan, and used vegetable oil which has a high smoke point, yet this still happens. I would be very grateful if you could maybe tell me what I'm doing wrong. Many thanks.

    • @CastIronCooking
      @CastIronCooking  4 ปีที่แล้ว +1

      *Sounds like you have some kind of chemical burning on the pan. Maybe there is too much oil stuck on it but I really don’t know. If it were me I would take a green scrub be made out of plastic and a little mild dish soap just a drop or two and lightly scrub around followed with a sponge. You might be cleaning it up right after you cook, I have a playlist at the end of this videoThat will show you how to do it properly I only know one or two people besides me that do it the way I do on TH-cam. Seasoning the pan right like I have and cleaning up like I have will give you the mirror like finish on your pans as well as long as they are antique cast-iron. I do have cleanup and seasoning videos for the new cast-iron with a grainy surface and really heavy. It is in the same playlist. I hope that helps!*

    • @JohnConboy1
      @JohnConboy1 4 ปีที่แล้ว

      @@CastIronCooking Thanks for the prompt reply. I think the fact that the surface of the pan is ribbed as opposed to flat, has maybe caused , as you say, some sort of chemical build up. The pan is a Typhoon brand that came pre- seasoned, but I think I may have to strip it down and season again. Thanks for all your informative and enjoyable videos!

    Question: I noticed that you did not crack the egg on the skillet. I read a comment on a different You Tube site where the "cook" was criticized for doing just that. Can you explain any significance other than keeping the shell pieces out of the skillet? Thanks.

    • @CastIronCooking
      @CastIronCooking  6 ปีที่แล้ว

      +Wine Forecaster My neighbor has a cast-iron skillet time he cracks is eggs on the side of the pan. Now it is caked on the side of his plan and water gets underneath and causes rust. That’s why I don’t crack it on the side even though I wash the pan afterwards anyway. Egg left arm cast-iron is bad. It will eat the paint off of cars if left on them. If the guy on the video has a Clean pan then I guess it doesn’t matter it’s whatever preference you choose. People usually comment things like that On popular videos to get noticed. lol

    • @CastIronCooking
      @CastIronCooking  3 ปีที่แล้ว +1

      *You have to build up the seasoning on it but the ones you see me cooking with are antique Lodge. You should get one of those with the smooth inside and they are a lot lighter. But you can still cook on yours just as easy. Search for nonstick eggs full of beans in the TH-cam search **bar.You** will see a nonstick egg video on your skillet from a channel called full of beans. Don’t know what happened to the owner hasn’t been on it in years. You must cook proteins like chicken and steak to build on your seasoning. My cast-iron skillet‘s were gray metal just like yours was before it was pre-seasoned. When I seasoned of mine they were a little darker but it took time cooking to give them the mirror like finish that you see now. The trick is to season it the way I do if you ever get an antique, and how are you clean it when you’re done cooking. I do these both different than everyone else and it is in the playlist at the end of this video. You will see two amazing before after cleaning videos with cast iron.*

    I recently venture into cast iron cooking. I seasoned my pan 6 times (with organic flaxseed oil at 450F for an hour) followed by a layer of Caron & Doucet - Cast Iron Oil.
    The egg sticked like glue to the pan. What possibly gone wrong? Is it because I put my gas stove on high? Should it be on medium instead?
    Worse is after plenty of salt, elbow grease and hot water, some egg residual remains on my brand new pan. Frustrating but I don't want to give up.

    • @CastIronCooking
      @CastIronCooking  7 ปีที่แล้ว

      +Billy Lo it is 500° for an hour six times. Where everybody messes up including me when I first started seasoning pans is they don't wipe it off completely after putting on the oil. That will leave it tacky and sticky and each layer will become worse in trap moisture into you get rust underneath. If you are serious about getting a pan like mine. Get some Brillo with the soap in it like in this video, and follow the instructions to the letter and I promise you your pan will be just like this one. But you must get the proper stuff. Organic flaxseed oil with no additives. Brillo with soap. Kleenex paper towels which I am using bounty paper towels,or shop towelsbecause they must be lint free or it will stick on to your seasoning.thanks for watching!

      *I don’t sell when I restore they are a part of my collection. But I know a guy that does restoring and selling full time. I don’t post links here, but click on my Instagram link in the description box below and I will set you up with him. I am super jealous of this guy as I live in Phoenix or cast-iron is hard to find, at he lives in Chicago I think but he gets 100 pieces every couple of days, all the ones I am looking for he has. I don’t buy restored skillets because I like to hunt for them it’s part of the package! LOLYes I have my notifications turned off here and check them periodically because my phone beeps a lot and kills the battery. I don’t get too many comments or messages on my Instagram so I answer messages as I receive them.😉*

    Have you tried making crispy fried eggs on your iron skillet? Are these even possible? I seem to burn my cast iron skillet every time I try..!

    • @CastIronCooking
      @CastIronCooking  4 ปีที่แล้ว +1

      *Of course you can. You can cook the eggs as long as you want, and they are still going to slide around in the pan like on this video. That’s because I have a special technique on seasoning and clean up after cooking. Plus I cook on antique cast-iron that has a smooth bottom. But I also have seasoning videos for the new cast-iron as well. If it’s not in the playlist at the end of this video, or in the information cards in the video my cast-iron seasoning and maintenance playlist is on my channel page. At the end of this video you will see my nonstick eggs on a stainless steel pan! Who would’ve thunk it! lol thanks for watching and commenting, I appreciate you!*

    It took me a while to realize to make sure the skillet was up to temperature.

      *I usually turn mine on medium, and wait 10 minutes. That is usually hot enough to get things going. A little longer if you are frying chicken or anything like in my fried foods, playlist. Then you can just stick a wooden utensil in the oil and if it starts bubbling really fast around the word you know it is time to start frying. If you like my videos, please subscribe. Thanks for watching and commenting Kevin, I appreciate you.*

      I bake my chicken at 375 for 45 minutes while seasoning the outside of my skillet.

    Wouldn't that put steel or iron scrapings into your food? I thought wood is the best iron cooking utensil.

    • @CastIronCooking
      @CastIronCooking  3 ปีที่แล้ว

      *No… Not even if you took it and scrubbed it onto the cast-iron. Steel is metal and so is cast iron. You cannot scrape scrapings from these. You are confused with chemically coated cookware like Teflon and stoneware and the list goes on. But you have come to the right place! This video is to show you that cast iron is non-stick.*

    My eges keep having black flakes on them why?

    • @CastIronCooking
      @CastIronCooking  ปีที่แล้ว +1

      *You didn’t season your pan properly or you bought it preseasoned and they seasoned it incorrectly. that is the seasoning chipping off into your food. Time to give it a good scrub down and re-season it. Check out my cast iron skillet cleaning playlist. It might be at the end of this video or click on the information cards in the top right hand corner to see if it is there. But if not it is on my TH-cam channel page don’t forget to like and subscribe while you’re there!*
