A little thing I have learned myself with the volume automation thing... you can edit the velocity of notes in the Piano Roll. The lower the velocity, the less sound a note will make. That way you don't have to make an automation

Not necessarily all the time
With a lot of soundfonts and some plug-ins, if you lower the velocity of a note, the volume will decrease as well
If you're doing something where you only need it to last a couple of steps, going for velocity is the way to go. With stuff that will last one bar or longer, yeah, go for automations.
