Looks delicious, when you cover with paper towel and put back on low heat for 15 minutes doesn't that dry out the meal- or over cook it? Wasn't the rice already cooked? It turned out really good but I'm concerned I may have overlooked rice and potatoes. Could you clarify please?
Covering the rice with paper towel is to retain the moisture so the rice does not dry out. Yes its already cooked but there are some tresses of liquid, its not necessary though , it depends on the rice and how much liquid it requires to cook it in the first place x Overcooking the rice can happen , may be next time add less liquid and for the potatoes it depends if they were totally cooked or slightly cooked when sauted . I hope I have answered you correctly if not pls do let me know I want to make sure you get your pilau right and perfect!

Will it be possible to explain what type of rice will be an ideal for a good Pilau rice. can provide the measurements such as kama mchele kilo moja kiasi gani vitunguu swaumu or cumin etc just to balance the flavour. Any good basmati rice will be good for Pilau and for this recipe I used Royal Basmati , sorry darling I do not use kilogram, I prefer cups its easy when you are making less quantity so for 1 cup of rice, I used 1 1/2 cup of liquid. I'm wondering if you know, there's this coconut sweet, I don't know what it's called, do you by any chance know what I'm on about and how to make it? Lol it's very difficult to explain when you don't know the names of things :) but basically it tastes like coconut and sugar.
It really depends on what part of the meat you use and also mutton cooks lesser time, I think I cooked mine between 1.30 hrs to 2, you need to check on it to ensure its cooked x thanks.

I soak the rice soften and elongate the grains. For every cup of rice is 1.5 liquid either water or broth

It's a personal choice, I don't like tomatoes in my pilau but you can use if you wish
