BBQ'd Dorado fillet is one of the best meals I've ever had. Caught it while fishing off the coast of Phuket, Thailand.
Btw, just a suggestion, but very surprised to see you pour oil onto a grill pan given the oil will just sit between the slats and the fish will be on top, i.e. the two never meet. Instead, try rubbing a little oil onto the fish, (same with steak, oil the meat and not the pan), and then you also shouldn't have to worry about the fish sticking to the grill pan either.

A recipe for dolphin that I learned from a friend down in the keys was to load it up with old bay, sear it in the pan and then serve it with ranch dressing on the side to dip in. I know it sounds absolutely crazy but when I tried it, it changed my entire life. I always keep old bay around because of him and now I keep the entire line up of everglades seasoning because of you.
