Try hook magnets for your calendar on the white board if you want to bring it down. You can also use magnetic tape for things you hang on the whiteboard. They both work great for me.

You’re like my new bud now! Not too many male teachers in elementary. Glad I found your channel. Good luck this year!

You can put a orange cone like the little ones you get at dollar tree on there desk that says student in bathroom 27:05 so you can know who went to the bathroom

If your whiteboard is magnetic, you can get hook magnets so you can lower your calendar.

You could do your lunch count and bathroom count much like the old fashioned behaviour charts where you laminate pieces of card for children to peg their names on. I personally have a chalk board where the write their names next to their lunch choice and 2 cups which they put on their table when they use the bathroom. That way only 2 can go at once.

I would carefully think about how you are going to implement your washroom sign-out procedures. In theory, it should prevent students from asking to go to the washroom to fool around, however, there could be the case where students start to feel like they have to hold it when they actually have to go because they are scared to use all their washroom passes because then they won't get a reward/prize like other students who maybe don't need to use the washroom as often. Not to mention, some students could have medical issues that are unknown/undisclosed that require them to use the washroom more frequently. (I've had parents not disclose medical conditions when they registered their child for school).
But you should definitely have a sign-out system of some sort to keep track of who is in/out of the room at all times in case of any emergencies. One of my previous classes, they had to write their name the time they left and the time they came back so I could see if there was a certain time they always went to the washoom and if they were gone for an extended period of time.
