here is my advice. Since you don't have a LOT of beans to create "heat" for fermentation, I suggest you place your beans inside a ice cooler, place a bottle of hot water inside, and close the ice box or cooler. You might need to replace the hot water every day to maintain a higher temperature. This is called "micro fermentation". i've been doing this for 5 yrs, since I only have about 8 criollo trees.
Thank you for the tip. I will definitely try that. Glad to know you have criollo. I am looking for that variety right from the start. From what country?
@Jen Jen Thought Great video. Thank you for posting. Just an idea. If your video is quite long (more than 3-4 minutes), maybe you can put time stamps, so people will not be confused with the many steps. For example, 0:01 intro 0:50 collecting the pods 1:20 collecting banana leaves 1:40 putting the cocoa bean seeds into the box and so on. Thank you.
Thank you for your support. You may try chocolate compound mixed with cream. 2:1 ratio for chocolate and cream would be great. Check this link for different brands po th-cam.com/video/Slav2qP1cr0/w-d-xo.html
