Where do you recommend buying the Yoshan roaster? And what's a fair price?

You can either contact Yoshan directly through their website or you can go through Alibaba. The pricing will be the same either way, but you might feel safer using Alibaba, as they have an escrow build into their transaction. I can't really give you a fair price, because I"m not sure which roaster you're looking at. That said, there's really no room to negotiate when buying one of their roasters. The only way to save money is to order more than one unit.

Using the tryer does only short irritatiions on the readings of the probes.

Enough that I don't at this point feel the need to pull the trier. You'd mentioned the same concern on another video. I'm curious what roaster you're working with Erhard. Besides the probe size and sensitivity, I've found that my probe is placed a little too center drum and close to the tryer, with this Yoshan DY-2. I'm considering having mine relocated, which might change my mind as to how often I feel the need to use the trier.

No problem , it is completely up to the roaster when he feels it useful to pull the trier. Anyway, it was useful to find the displacement of the probe.
In my 1 kilo roaster pulling the trier causes only a little dip in ET but nothing else. I use the trier mainly for the last period for deciding when to end the roast.
My roaster is an AKANEKS 1kg from Turky.
