I actually did a blackberry version over the summer when packages were only 49 cents each. I strained out all the seeds before heating. So tasty!! We served it at two barbecues with sparkling water, so it became our "mocktail" for the non-drinkers of the group.🍋💛💜
My husband tasted it and loved it. He said he'll be taking a big jug of it out on the tractor this summer. I thought, " hmmm, I wonder if I could make it like an electrolyte drink." I added a couple of small pinches of salt to our test glass and tasted it. I gave him some and he liked it even better than without the salt. Granted, it was a very small amt. I feel good about keeping him hydrated in the summer months. PS... I took your suggestion to strain out the seeds and I'm very glad I did!

Those directions said to add one part mix to 3 parts water, which I thought was perfect. The newer book that I have says one part mix to one part water, tonic water or ginger ale. I, personally, will stick to 1:3. And the "old" recipe dis say you could interchange fruits. I liked blueberry and cherry. I think peach would be good, too. Thanks for doing this one!
Concentrates sound like a great idea to can also as far as elevation. It would be really interesting to see a video on helping us understand how elevation scientifically factors into the canning process and preserving process.

Using lemon juice or lime juice, the possibilities are nearly endless. Since cranberries are in season, cranberry mixes can be a thing. Allulose may be a good sub for sugar.

I bet this would be good as a mint pomegranate lemonade concentrate. I make this fresh in the summer but having some as a concentrate for winter would be lovely, too!
You mentioned that steam is the same temperature as water. Actually steam is "super-heated" water and it is much hotter. That is the reason why the canning jars are above the water in a steam canner, and fully submerged in waterbath canning. That ensures even temperature throughout the entire canning jar.

I always do 4 parts water to 1 part concentrate. works perfect. So if a pint of concentrate, 4 pints of water. 1 part jelly jar, 4 jelly jars of water. And Ive done, strawberry, blackberry, raspberry, even rhubarb. delicious

Pam: Can you double rack small jars like half-pints in a steam canner? I think that lemonade concentrate would be great to have on hand. If your acid level is not low enough you could always add 1/8 teaspoon of citric acid to each pint jar. The citric acid will intensify the berry flavor. But be careful if you use it as it has powerful pucker power if too much is used. I often use citric acid in candy making as well as canning. What a nice treat in winter, but oh so good in the summer on a warm day.
I love this but since I have people in my family that can't do sugar so I would can it without the sugar and then figure out how much was needed per cup. Then people could add the sweetener of choice. I can see this with any fruit!! Thank you!

I'm going to try mixing the berries and lemon juice then freeze dry, powder and later add sugar & water to taste. I just don't have the freezer or jar space for storage for the amount of concentrate I would like to process.

According to the ball canning book.....4 cups of whole, fresh raspberries is 1lb. You would have needed 1.5lbs (purchase 2 pint containers) of fresh raspberries for a proper conversion of strawberry to raspberry.

I was very pleased to see that you measured the pH. Just want to add that the litmus paper you used with a 1-14 scale is not detailed enough for canning. F.ex you can't see the difference between pH 4,2 and 4,7. The ideal solution is a digital pH meter with a sensor for food, but you can also get litmus paper with a scale 2,8-4,6 with 0,2/0,3 incremental steps.

One pint of syrup to 3 pints of water makes 2 quarts. That was the stronger mix. The one she prefers is 1 of syrup to 4 of water. You could also use club soda or soda water.
You can easily look this up. But here is a basic breakdown. 4 cups = 1 quart. 2 cups = 1 pint. You would need 1 pint of raspberry concentrate added to 6 cups of water to equal 2 quarts (8 cups total).
Fresh lemons are not acidic enough to can, unfortunately. Bottled lemon juice is what is needed for canning. If you are not canning, puree your fruit and add it to your fresh lemonada
Certain lemons like f.ex Meyer lemons are not acidic enough, but most are totally fine. I wouldn't worry as the fruit in itself is acidic and the sugar content high enough to prevent bacterial growth. Do as Pam and buy some litmus paper and measure the pH to make sure, if you want.

Make sure you're using Celtic salt. So much healthier.

Does the red color of the berries impact the color of the litmus paper for validation?

I’ve done the strawberry 🍓 lemonade 🍋 and I strain the seeds I dilute it 3:1 for company,but for myself 5:1 because I’m a diabetic

Three to one ratio is like kool aid. Kool aid is mixed one cup of sugar to to two quarts of water.

Any thoughts on substituting stevia for the sugar. Stevia is heat stable but there is a volume loss for sure.

I can tell you that I used lime juice instead of lemon juice to make lemon bars one time and they were terrible, a bitter taste.

I can’t see that there would be any way there could be a problem with this mixture, with all the lemon juice and sugar.
