protip for folks at home: microwave your peanut butter for about 30 seconds before mixing. it'll give the peanut butter proper viscosity so it actually makes a proper paste when mixed with icing sugar

i was just about to comment that i find it so strange and hilarious and charming that ian has a shitton of washi tape, yet he doesn't know there's a difference between baking soda and baking powder. bless his dear, beautiful heart. love this charming man.
Pro baker tip: For things like peanut butter or molasses, which get stuck in measuring cups, lightly spray the inside of your measuring cup with Pam/cooking spray. It'll make it easier to remove from the measuring cup, and be less messy!
I've baked for like 6 years, and I didn't even know that-
I'll have to remember that for later
Also, for sticky things that can be poured, like honey, you can use the back of your measuring spoon to make an imprint in the dry ingredients and pour directly into the hole!
The much easier fix is to just skip the measuring cup and measure by weight instead
I will forever say, this may be the most underrated TH-cam channel ever.

If you spray the measuring cup with cooking spray first (I usually use canola oil spray) it is SO much easier to get the peanut butter out of the cup. It'll slide right out. Pro Tip ;)

Watching this while waiting for my 3am pizza to arrive. Almost at the point of hallucinating I'm so tired and hungry but it's so warm and I cant sleep. That eagle screech was so good, I replayed it three times. Hopefully it will call upon the pizza gods and get me my sustenance sooner.

Just finished watching the video, never thought that watching a grown man ATTEMPT to cook could be this hilarious.
At this point i feel like you could record yourself doing anything and it would still be fun with your humor and editing style.
Tip: When ya scoop into flour & powdered sugar, that has the effect of packing the ingredient. Hold the measuring cup then spoon ingredient into the measuring cup until it is heaped, then the flat edge of a knife to level.
So when you consider that, you probably had too much of those ingredients. That’s why the peanut butter balls were so dry.
The chef advice of specialty chocolate etc is not important at this stage of learning.

I love brutalfoods, and I think this episode is my favorite so far. To answer your questions in the video, a spoon or rubber spatula (what you used to mix the wet and dry ingredients together) was the best tool, baking soda is strictly sodium bicarbonate while baking powder is a mixture of that and a few other chemicals used for baking, the peanut butter balls looked fine, maybe a little less powdered sugar would have helped a bit (that's the recipe's mistake though, not yours), incorporated means to mix until there's no more lumps in the batter (over mixing would incorporate too much air into the batter which can cause tunneling in the cake, and will cause some uneven cooking).
Also, as a tip, when you have large chunks of chocolate to melt on top of smaller cakes like that, it's best to chop it into smaller pieces. Or, if you have a good grater, use that to make flakes. They'll melt easier and faster, rather than cave the top of your cake in
I agree with everything you said, besides this one thing: it's best to spoon things like flour and powdered sugar into the measuring cup and level it off with the back of a knife.
I also like to sift dry ingredients with a sifter when baking.
C H I probably should have added those points in too, lol. I do that all the time. Becomes second nature when you've worked bakeries and kitchens most of your life
I would also suggest melting the chocolate instead of plopping it on top to melt.
Id also recommend to use a pastry bag to get the cupcake batter into the jars. Less messy and easier to control the amount you put in without getting it on the sides of the jar. Good luck!

This is not a great recipe... you did a surprisingly good Job, Ian! The techniques described in the recipe aren’t nearly as clear as they should have been, and sometimes just wrong!

@@juliamavroidi8601 I’m at the point where he’s stressing over the chocolate being too big for each jar. I’m guessing the recipe expected the bar to be thinner which would make it melt the way it’s described in the recipe, rather than little nuggets like Ian had, which are larger and not as easy to melt. I think he could’ve made them even smaller and used multiple smaller pieces per jar, but the recipe didn’t call for that.
I really appreciate how he sat there and just put tape on jars and still made it entertaining

Two super minor baking tips from one hobbyist to another: you can also check if the cake is done by looking at the top. If the top is starting to crack, it should be done.
Also, I always poke a toothpick down into it as well, especially if you're not cooking with a convect oven. The cake may look perfect on the outside, but the toothpick will reveal the truth -- perfectly clean and done, or still liquidy and needing more time! :^) In the case of something like these that have a filling it may not work the same, but for other cake-y type goods (including brownies) it's a good means to test without damaging the cake!
EDIT: also i don't know what it was about it, but that eagle screech near the end made me laugh so dang hard
i also didn't like the idea of just dropping a chunk of chocolate on it right after coming out of the oven. i would have preferred to let it cool and pour the chocolate on later.
the toothpick method really does work, and I always let it be a lil wet so the cakes a bit moister. just me
Yeah I was going to remark that the spring-back method is best for a cake like this because of the filling; a filling like that will always make the skewer or toothpick come out dirty which then could lead to overbaking. Spring-back method means it comes back up, meaning there's air all the way through it and no more liquid batter, and is just as much of a tell as a skewer. A cake top cracking also can't be used as a tell for all cakes -- rich cakes with a high liquid content like these are usually just going to dome, and you don't want that dome cracking because then you've overcooked it and made it too dry.
tbh it's all about learning aha, different batters have different cooking requirements and tells :)

I can tell you all about baking powder v.s baking soda! Baking powder contains baking soda. It is a mixture of baking soda, cream of tartar. Baking soda is a base, and you add it to the recipe to make the food rise. Baking soda is super at chemical reactions, which is why it makes cupcakes poof ever so nicely. Baking powder, and baking soda are used at the he same time where there is not enough of a chemical reaction to make it rise. That's why some recipes will have lemon, honey or brown sugars to act as acids to activate the baking soda. and for getting batter into small places you can use a piping bag.

Baking soda is strictly sodium bicarbonate. It is alkaline and used as a leavening agent when there is an acidic ingredient (chocolate, especially Dutch process cocoa, is acidic).
Baking POWDER is sodium bicarbonate mixed with an acid, usually cream of tartar, plus an anti-faking agent (usually cornstarch). Because it contains both an alkaline and an acid, it can be used as a leavening agent in most recipes regardless of ingredients.
Even though this recipe uses baking powder, it adds additional baking soda to counteract the acid in the cocoa powder. Hope this helped clear up the difference for you!
